- 350 g dried chickpeas, soaked for 12 hours

- 1 carrot
- 1 piece of red bell pepper
- 1 piece of Italian green pepper (optional)
- 1 leek, white part only

How to Make Garbanzos con Tagarninas Step by Step
1. Soak the Chickpeas the Night Before
The day before, weigh out 350 g of dried chickpeas, give them a rinse and place them in a bowl with plenty of water. They need to soak for at least 12 hours so they hydrate fully and cook in a reasonable amount of time.

2. Wash the Tagarninas Thoroughly
When you are ready to cook, start by rinsing 300 g of cleaned, chopped tagarninas (or cardillos) very well. You will most likely need several washes, stirring them with your hands and changing the water 3 or 4 times, or as many as needed, until it runs completely clean and no grit remains at the bottom. Otherwise, traces of dirt can ruin the stew.

3. Drain the Chickpeas into a Pot
Once the tagarninas are ready, go back to the chickpeas, drain them and place them in a large pot.

4. Add the Tagarninas
Next, add the tagarninas on top, although if you prefer, you can add them later depending on whether you like them more or less cooked. The usual approach, however, is to put everything in together, especially since that is how it was traditionally done.

5. Add the Oil, Tomato and Vegetables
Add 1 drizzle of extra virgin olive oil, 150 g of crushed tomato, 1 onion, 1 carrot, 1 piece of red bell pepper, 1 piece of Italian green pepper (if using), the white part of 1 leek and 1 small head of garlic. The garlic head should be well washed with no dirt left at the base. Optionally, add 1 or 2 bay leaves as well.

6. Cover Generously with Water
Cover these ingredients generously with water, until they are well submerged — at least a couple of fingers above the chickpeas — because the legumes will absorb quite a lot of liquid.

7. Cook Until the Chickpeas Are Tender
Then cover the pot and cook the stew until the chickpeas are tender. With a traditional pot, this can take up to 1 hour and a half. With a pressure cooker, 10 minutes at pressure level 2 from the moment it starts to whistle is enough, then remove from the heat and let the pressure release naturally so the chickpeas finish cooking in the residual heat. When you open the pot, check by piercing a chickpea, because depending on the variety or the soaking time it may need a little longer.

8. Peel and Cut the Potatoes and Chorizo
While the chickpeas cook, you can peel and cut 250 g of boiling potatoes into bite-sized pieces. You can also slice 200 g of chorizo into rounds or leave it whole, whichever you prefer. If you want to add morcilla, leave it whole so it does not fall apart.

9. Blend the Vegetables and Return to the Pot
When the chickpeas are ready, remove the onion, carrot, leek, red pepper and green pepper if used, and place them in a blender jug. As for the garlic, you can discard it or squeeze out the pulp and add it to the jug. Blend these vegetables with 1 or 2 ladles of broth until you get a smooth cream, then pour it back into the stew to give the broth body.

10. Add the Potatoes, Chorizo, Paprika and Cumin
Mix well so the broth comes together, then add the potatoes, chorizo and morcilla if using. Also add 1 teaspoon of sweet paprika and 1 pinch of cumin to taste. Adjust the salt and pepper as needed.

11. Simmer Until the Potato Is Tender and Rest
Cook the stew again until the potato is tender. About 15 minutes in a regular pot, or 3 minutes at pressure level 2 with natural depressurization in a pressure cooker, is usually enough. If you added morcilla, it is better not to use pressure so it keeps its shape. Finally, taste the broth, adjust the salt if needed, and let it rest for a while, until the next day, or serve right away.
