If you have ever wanted to make fresh pasta at home, ravioli is one of the most rewarding places to start. These homemade ravioli are stuffed with a savory mixture of ground meat, Parmesan, garlic, and parsley, then finished in a simple tomato and basil sauce that lets the filling shine. The result is tender, flavorful, and far better than anything from a package.
Making the dough and the filling takes a little patience, but the process is straightforward and deeply satisfying. While the dough rests, you mix the filling and let it chill so the flavors come together. Then you roll, fill, cut, and boil — and in just a few minutes the ravioli are ready to be tossed with sauce and served hot.
This recipe yields about 60 ravioli, enough to serve 4 people generously. If you are looking for something different, you can also experiment with other classic fillings such as ricotta and spinach, pumpkin and amaretti, mushroom and truffle, four cheese, or pear and gorgonzola. Each region of Italy has its own version of ravioli, and the sauces that go with them are practically endless — from a simple Neapolitan or marinara sauce to pesto or a creamy cheese sauce.

Ingredients for Homemade Ravioli
For 4 servings
- 300 grams all-purpose wheat flour
- 3 eggs
- 1 tablespoon oil
- ½ teaspoon salt
- 300 grams ground meat (beef, pork, or a mix)
- 1 egg
- 2 tablespoons breadcrumbs
- 50 grams grated Parmesan cheese
- 2 garlic cloves
- Chopped parsley
- 1 pinch of salt
- Ground black pepper
- 400 grams crushed tomato
- 2 garlic cloves
- A splash of olive oil
- Fresh basil

How to Make Homemade Ravioli Step by Step
1. Make the Pasta Dough
To make the homemade ravioli, the first thing we are going to do is prepare the pasta dough. For this, in a bowl we put 300 g of flour, together with 3 eggs, 1 tablespoon of olive oil, and ½ teaspoon of salt.

2. Knead and Let the Dough Rest
Beat the eggs a little with a fork and then begin to incorporate the flour little by little. Knead until you get a smooth and homogeneous dough. If we see that the dough is too dry, we can add one or two tablespoons of water. Cover with a damp cloth and let it rest for half an hour.

3. Prepare the Meat Filling
While the dough rests, we are going to prepare the filling. In a bowl we put 300 g of ground meat (beef, pork, or a mix), 1 egg, 2 tablespoons of breadcrumbs, 50 g of grated Parmesan, 2 finely chopped garlic cloves, a little chopped parsley to taste, 1 pinch of salt, and ground black pepper to taste.

4. Chill the Filling
Mix well until all the ingredients are integrated and you have a uniform mixture. Store the mixture in the refrigerator in a covered container until it is time to use it. This also allows the flavors to meld and the filling to become much richer.

5. Roll Out the Dough
When the dough has rested, divide it into four equal parts and roll out each part on a floured countertop with a little flour. You can use a pasta machine if you have one, but a simple rolling pin is enough. Roll out until each piece is about two millimeters thick. Let the pasta sheets rest covered with a damp cloth and sprinkled with flour so they do not stick to each other.

6. Add the Filling
Then, take one of the sheets and begin placing small balls of filling (about 7 or 8 g each) on it, separated by a couple of centimeters. There are also special ravioli molds that can be used for this purpose by following the manufacturer's instructions.

7. Seal and Cut the Ravioli
Brush with water around the balls and place another sheet of dough on top. Press well around each ball and flatten the filling a little to shape them, making sure there are no air pockets. Take a fluted pasta cutter or a cutting mold and cut the dough into squares. You can also cut the dough normally and then seal the edges with a fork (like empanadillas). Repeat until you finish the dough and the filling. In total, you get about 60 ravioli.

8. Make the Sauce and Cook the Ravioli
To make the sauce, cook 400 g of crushed tomato with 2 chopped garlic cloves and a splash of olive oil until it reduces by half. Once it is ready, cook the ravioli in plenty of salted water until they float. From the moment they rise to the surface, let them float a little longer so the filling cooks completely. As soon as they are ready, drain them and put them directly into the sauce.

9. Combine and Serve
Now all that is left is to add a few leaves of chopped fresh basil, mix well, and serve immediately, since they are best enjoyed freshly made. At the table, you can add more grated cheese if desired.

Tips for the Best Homemade Ravioli
Try Different Fillings
For when you are looking for something different, we suggest some filling ideas, though you can also feel free to experiment and create your own combinations. Some of the most famous and traditional fillings are: meat and Parmesan (the one we tell you about here), ricotta and spinach ravioli, pumpkin and amaretti, mushroom and truffle, four cheese, pear and gorgonzola.
Pair with the Right Sauce
Practically every region of Italy has its own version of ravioli, as well as the sauces that accompany them, which are practically unlimited. They combine wonderfully with any tomato sauce such as Neapolitan sauce, marinara, or even Bolognese, the perfect option for ravioli filled with cheese or vegetables. They are also delicious with other sauces such as pesto or any cheese-based sauce.
Make Sure to Seal Well
When sealing the ravioli, press firmly around each ball of filling and flatten it slightly to avoid air pockets. If you do not have a fluted cutter, a fork works perfectly to crimp the edges. Also, keep the pasta sheets covered with a damp cloth as you work so they do not dry out and crack.
