The famous and irresistible molten cheesecake from La Viña bar and restaurant in San Sebastián's old town is a sweet temptation made without a crust or toppings simply because it doesn't need them. This is, without a doubt, a special cheesecake dessert that's surprisingly easy and quick to prepare.

The creator of this marvel is Santiago Rivera, who has publicly shared his original recipe so that we can all enjoy it from the comfort of our homes. However, if we have the opportunity to visit San Sebastián, a visit to the renowned La Viña restaurant is a must. Treat ourselves to a delicious meal and, as a grand finale, savor the creation of his famous cake right there where it was originally conceived.

The recipe below is adapted for home use . Using the restaurant's recipe, you would get a cake of about 2 kg, enough for 12 people, which would be perfect for when you have guests. If you want a dessert of this size, simply multiply the quantities indicated in our recipe by 1.75 and use a 24 cm cake tin.

Preparing this dessert is very easy. You could simply combine all the ingredients in a bowl and mix them with a whisk or food processor. However, the ingredients are very easy to mix by hand with a simple whisk , minimizing the mess.

  • 570 g of cream cheese (Philadelphia type)
  • 4 eggs
  • 230 g of sugar
  • 10 g of flour
  • 285 ml of cream (35% fat)

How to make La Viña cheesecake

First, preheat the oven to 200°C. Put 570g of cream cheese in a large bowl and add 4 eggs, one at a time.

Add the eggs one at a time.

We stir and integrate the mixture well with a whisk, after adding each egg.

Working the mixture

Next, we add 230g of sugar and again homogenize the mixture using our whisks.

Pour in the sugar

Next, we add 10g of flour and stir again with the whisks, integrating the mixture.

Incorporate the flour

Finally, we add 285 ml of cream and once again, we stir well and integrate all the ingredients.

Include cream

Once the mixture is prepared, crumple a sheet of parchment paper and dampen it slightly to make it easier to place in the pan. Then, smooth the sheet with your hands, shake off the excess water, and place it over the pan.

Line the entire mold

We pour the cheese mixture into the mold with the parchment paper already in place.

Place the baking tin in the oven at 200°C (390°F), using the top and bottom heating elements, on the lower-middle rack. Bake for 40 minutes, or until the surface is a characteristic golden brown. If, before 40 minutes, the tart is browning too quickly, cover it with aluminum foil to prevent burning while it finishes baking. Conversely, if the tart is still pale after 40 minutes, broil it until the surface is golden brown.

Bake the mixture

Once the baking time is up, remove the cake tin from the oven. At this point, you might think the cake isn't cooked enough, as it will feel a bit wobbly and the center will have sunk slightly. However, this is perfectly normal. After about two hours of resting outside the oven, the cake will have reached the perfect texture. Once it has cooled, carefully remove the parchment paper from the tin and serve or refrigerate. Now all that's left is to enjoy this delicious treat!
