Pollo con ciruelas, also known as pollo a la catalana, is a beloved chicken stew from Catalonia that pairs golden browned chicken with sweet prunes, toasted pine nuts and a warm hint of cinnamon. The sauce comes together slowly with onion, garlic, grated tomato and a splash of white wine, so every bite is rich and deeply savory.

We like to use chicken thighs and drumsticks because they stay juicy through the simmer, though a whole chicken cut into quarters or eighths works beautifully too. A handful of raisins or dried apricots can join the prunes and pine nuts for an even fruitier sauce. Keep plenty of crusty bread nearby, because the sauce is the best part.

4. Reduce the wine and add prunes, pine nuts and broth

Pour in 100 ml of white wine and let it reduce for 5 minutes. Then add 100 g of prunes, 30 g of pine nuts and 200 ml of chicken broth to the pot.

5. Simmer for 15 minutes

Bring everything to a boil, lower the heat and cook uncovered for 15 minutes, or until the chicken is fully cooked. To check, pierce the thickest part of a piece with a skewer; the juices should run clear.

Tips for the Best Pollo con Ciruelas

Choose the right chicken pieces

Thighs and drumsticks are our favorite because they stay tender during the simmer, but a whole chicken cut into quarters or eighths also works well. Add a handful of raisins and dried apricots alongside the prunes and pine nuts for extra sweetness.

Adjust the cooking time to the size of the pieces

Cooking time depends on how large your chicken pieces are. Cut into quarters, the chicken needs about 30 minutes after the broth goes in, rather than the 15 minutes it takes when cut into eighths.

Let it rest for even more flavor

This stew can be eaten freshly made, but it improves a lot if you let it rest in the fridge until the next day, when the flavors have had time to mingle.
