Pork and Potato Stew Recipe: Hearty Spanish Comfort
This page may contain affiliate links.

This pork and potato stew is the kind of dish that fills the kitchen with a deep, savory aroma while it bubbles away on the stove. Tender chunks of pork shoulder, sweet carrots, celery and ripe tomatoes come together with red wine and a rich vegetable broth for a meal that tastes like it simmered all day.

It is a traditional Spanish comfort dish that is genuinely easy to make, because the slow cooking does most of the work for you. Once the meat is browned and the vegetables softened, you simply add the potatoes and broth and let the pot do its thing.

How to Make Pork and Potato Stew Step by Step

1. Cut the meat

Cut 1 kg of pork into bite-sized cubes of about 3 cm and season them with salt and ground black pepper. For this stew, pork neck, shoulder or jowl all work well, so ask your butcher for the best stewing cut they have available.

Heat 30 ml of olive oil in a pot and cook the seasoned pork for a few minutes until it is golden brown. Transfer the meat to a plate and set it aside.

3. Cut the vegetables

4. Sauté the vegetables

In the same pot where you cooked the meat, sauté the onion, carrot, celery and tomatoes over low heat for 8 minutes, until the vegetables are softened and sweet.

5. Add the wine and let it reduce

Pour 200 ml of red wine into the pot and let it reduce over high heat for 3 minutes, stirring to lift the browned bits from the bottom.

6. Add the potatoes, broth and meat and simmer

Add the potatoes and the reserved pork to the pot along with 200 ml of vegetable broth. Bring everything to a boil, then lower the heat, cover the pot and cook for 1 hour and 30 minutes. When 10 minutes remain, add 60 g of frozen peas.

Tips for the Best Pork and Potato Stew

Choose the right cut

Pork neck, shoulder or jowl are ideal because they become tender and juicy during the long, slow simmer. Ask your butcher for the best stewing cut they have available.

Let it rest overnight

Like all stews, this one gains even more flavor if you prepare it the day before and let it rest in the fridge until the next day. Do not skip this step if you want the richest possible flavor.

Adjust the seasoning at the end

Because the broth reduces and concentrates during cooking, taste the stew at the end and add a little more salt only if needed. This keeps the seasoning balanced.
