This time, we've added chopped walnuts to the batter for a crunchy texture, although you could substitute them with another nut, such as hazelnuts, which also work wonderfully. If you want to make this brownie gluten-free, simply replace the wheat flour with cornstarch. Since it uses so little flour, the result will be practically the same.
You might be surprised by the short baking time and low temperature, but we did it this way to ensure it's very moist. Since every oven is different, you'll know it's done when you see the edges are dry and the center is still slightly undercooked. Once it has cooled and chilled in the refrigerator, it will have the perfect texture.

Banana Brownie Ingredients
- 150g dark chocolate (chips or chopped)
- 75g butter
- 85g sugar
- 3 medium eggs at room temperature
- 1 tsp vanilla extract
- 3 ripe bananas
- 30g all-purpose flour
- 35g unsweetened cocoa powder
- 1 pinch of salt
- 75g walnuts

How to make banana brownies
First, preheat the oven to 160°C (325°F). Microwave 150g of dark chocolate (chips or chopped) with 75g of butter for 30 seconds and stir with a spatula to combine.

We add 85g of sugar and beat the mixture with a whisk.

Add 3 medium eggs one at a time, meaning don't add the next one until the previous one is fully incorporated with the whisk. Then add 1 teaspoon of vanilla extract and whisk to combine.

We crush or mash 3 ripe bananas and add them to the previous mixture.

Add 30g of wheat flour, 35g of unsweetened cocoa powder, and a pinch of salt. At this point, whisk just until all the ingredients are combined.

Add 75g of roughly chopped walnuts and stir to incorporate them into the mixture.

We place the banana brownie mixture in a 23 cm square mold lined with baking paper.

We bake the banana brownie for 25 minutes at 160ºC with heat above and below.

We let the brownie cool in the pan and refrigerate it overnight. Once it's cold, we unmold it and serve it cut into slices.
