Caramelized torrijas are an even more irresistible version of the traditional Spanish dessert. With a juicy interior and a crunchy, golden outer layer, they become a true delight for anyone who loves this sweet treat.

If, like us, you are a lover of this delicacy and enjoying the richest torrijas is one of your sweetest goals, you will be glad to know that this is the recipe you are looking for. They are very easy to make, and the caramelized touch along with the contrast of flavors, textures and temperatures from serving them with ice cream make this dessert the most irresistible bite any torrijas lover will have tried.

To make these torrijas, we caramelize them right before serving, which guarantees a perfect crunchy layer. To make this sweet even more irresistible, we serve the torrijas with a scoop of ice cream, which can be vanilla or your favorite, to achieve a perfect contrast between the warm freshly made torrija and the coolness of the ice cream. This is a completely irresistible combination that also balances the sweetness of the torrija. A dessert destined to succeed.
Ingredients for Caramelized Torrijas
This recipe makes 8 servings.
- 1 liter of whole milk
- Peel of half a lemon
- 1 cinnamon stick
- 1 teaspoon of vanilla paste
- 140 g of sugar (40 g for the milk and 100 g for caramelizing)
- 200 ml of heavy cream
- 2 medium eggs
- 8 slices of brioche or slightly stale bread
- 50 g of unsalted butter
- Vanilla ice cream (or another flavor to taste)

How to Make Caramelized Torrijas Step by Step
1. Infuse the Milk
We start by infusing 1 liter of whole milk with the peel of half a lemon, 1 cinnamon stick, 1 teaspoon of vanilla paste and 40 grams of white sugar. To do this, we bring this mixture to a boil and let it rest for 10 minutes. Then we let it cool completely and remove the lemon peel and the cinnamon stick.

2. Mix the Milk with Cream and Eggs
Once the milk has returned to room temperature, we mix it with 200 ml of heavy cream and 2 medium eggs, and set this mixture aside.

3. Cut the Brioche
Meanwhile, we cut the brioche or slightly stale bread into 8 slices about 3-4 cm thick.

4. Soak the Bread
We put the brioche bread slices in a dish and bathe them with the milk mixture. We take it to the fridge for 1-2 hours so they soak well.

5. Drain the Torrijas
After this time, we drain the excess liquid from the torrijas on a rack.

6. Coat in Sugar
We heat a skillet over medium heat with 50 grams of unsalted butter. Meanwhile, we pass the brioche slices soaked in milk through 100 grams of sugar, on both sides.

7. Caramelize the Torrijas
We caramelize the torrijas in the skillet. We let them cook for about 5-8 minutes on one side, flip them and let them caramelize for another equal amount of time on the other side.

8. Drain the Excess Fat
We remove the caramelized torrijas from the skillet, draining the excess fat.

9. Add the Ice Cream
We put a scoop of vanilla ice cream or another flavor to taste on each torrija.

10. Serve Immediately
We serve the caramelized torrijas immediately with the vanilla ice cream so we can enjoy them before it melts.

Tips for the Best Caramelized Torrijas
Caramelize Just Before Serving
To make these torrijas, caramelize them right before serving, which guarantees a perfect crunchy layer. This way the exterior stays crisp and the interior remains juicy.
Serve with Ice Cream
To make this sweet even more irresistible, serve the torrijas with a scoop of ice cream, which can be vanilla or your favorite, to achieve a perfect contrast between the warm freshly made torrija and the coolness of the ice cream.
Balance the Sweetness
This combination is completely irresistible and also balances the sweetness of the torrija. A dessert destined to succeed.
