Chicken Fajitas Recipe: Fast Tex-Mex Weeknight Favorite

Chicken fajitas are one of the most popular dishes in Tex-Mex cooking, and for good reason: they come together in about twenty minutes and turn a handful of pantry spices into something smoky, savory and genuinely exciting. Strips of chicken breast soak up paprika, cumin and black pepper, then hit a hot pan with colorful bell peppers and onion.

This version keeps things quick and weeknight-friendly. The chicken marinates for at least an hour so it stays tender and deeply flavored, while the vegetables are sliced into thin julienne strips so they cook fast and keep a little crunch.

How to Make Chicken Fajitas Step by Step

1. Marinate the chicken

Start by cutting the 500 g of chicken breasts into fairly even strips. Place them in a bowl and marinate with 1 teaspoon of sweet or hot paprika to taste, salt, freshly ground black pepper, 1 tablespoon of ground cumin and 1 tablespoon of olive oil, which helps bring all the ingredients together. Then refrigerate the chicken for at least 1 hour.

2. Slice the vegetables

Cut 1 green bell pepper, 1 red bell pepper, 1 yellow bell pepper and 1 onion into julienne strips. Set them aside.

3. Sear the chicken

Once the marinating time is up, sauté the chicken strips over medium-high heat in a skillet or wok with 2 tablespoons of olive oil. Optionally, you can add a few chili flakes. Brown the chicken only partially, since the vegetables go in next.

4. Add the vegetables

Add the julienned peppers and onion to the skillet and cook everything together for about 2 or 3 minutes, until the peppers are cooked but still retain a bit of crunch.

5. Warm the tortillas and serve

To finish, warm 8 wheat tortillas for a few seconds in the microwave or in a skillet without oil, and spoon a little of the chicken and vegetable filling onto each one. Serve immediately with lime wedges for a delicious Tex-Mex experience.

Tips for the Best Chicken Fajitas

Marinate for flavor and tenderness

To make the fajitas really tasty, marinate the chicken with the spices and let it rest in the fridge so it absorbs all those flavors. Beyond the taste, this also makes the chicken more tender.

Adjust the heat to your taste

Spice level varies from person to person, so adjust it to your preferences: add a few chili flakes when marinating the chicken, use hot paprika as in this recipe, or serve the fajitas with jalapeños for the boldest eaters.
