Mussels escabeche is one of the most beloved tapas and appetizers in Spanish homes, and for good reason. Tender steamed mussels soak up a bright marinade of olive oil, garlic, sweet paprika, white wine and vinegar that gets better with every hour it rests.
The whole dish comes together in about 20 minutes of active work, plus a day of chilling that transforms the flavors into something deeply savory and tangy. Serve it cold or at room temperature with crusty bread and a glass of crisp white wine for an effortless, impressive starter.

This version keeps things simple and faithful to tradition: steam the mussels, fry the aromatics, bloom the paprika off the heat, and finish with wine and vinegar. The result is a glossy, golden escabeche that clings to each shelled mussel.

Ingredients for Mussels Escabeche
This recipe makes 2 servings as a tapa or appetizer.
- 1 kg mussels
- 25 g olive oil
- 1 garlic clove
- 1 bay leaf
- 4 black peppercorns
- 1 teaspoon sweet paprika
- 30 ml white wine
- 15 ml vinegar

How to Make Mussels Escabeche Step by Step
1. Steam the mussels open
For this recipe it is essential that the mussels are alive when you steam them open. If any mussel has a broken shell or does not open once cooked, discard it because it is most likely not in good condition. Once the mussels are open, strain and reserve a little of the cooking water to add to the escabeche.

2. Shell the mussels and reserve the cooking water
Once open, remove the mussels from their shells and place them in the container where you will later add the escabeche. Strain 30 ml of the cooking water, which you will use afterward to make the escabeche.

3. Fry the garlic with bay and peppercorns
To prepare the escabeche, put a pot over medium heat with 25 g of olive oil, 1 garlic clove sliced into rounds, 1 bay leaf and 4 black peppercorns. Cook the mixture for a couple of minutes, being careful not to burn the garlic.

4. Add the sweet paprika off the heat
Remove the pot from the heat, add 1 teaspoon of sweet paprika and mix it in well.

5. Add the wine, vinegar and cooking water
Next, return the pot to high heat and add 30 ml of white wine, 15 ml of vinegar and 30 ml of the mussel cooking water.

6. Boil the escabeche for 2-3 minutes
Stir and wait for the mixture to come to a boil. As soon as it starts boiling, let the escabeche cook for about 2-3 minutes.

7. Pour over the mussels and let them rest
Pour the escabeche over the mussels and let them cool to room temperature. At this point they can already be eaten, but if you let them rest in the refrigerator for 24 hours, they will be even tastier.

Tips for the Best Mussels Escabeche
Choose live, fresh mussels
Only use mussels that are alive before steaming, and discard any with broken shells or those that stay closed after cooking. This guarantees both safety and the best texture and flavor.
Bloom the paprika off the heat
Adding the sweet paprika once the pot is off the heat keeps it from scorching, which would turn it bitter. Stir it quickly into the warm oil so it releases its color and aroma without burning.
Let it rest for a full day
The escabeche is good as soon as it cools, but a 24-hour rest in the refrigerator lets the vinegar, garlic and paprika mellow and penetrate the mussels. Serve it cold or at room temperature for the fullest flavor.
