Olla aranesa is the ultimate mountain comfort food, a robust stew born in the Aran Valley of the Pyrenees. It combines white beans, chicken, pork, and a rich variety of sausages into a single pot that warms you from the inside out. This is the kind of dish that has been sustaining families in the high mountains for generations.

What makes this stew so special is its layered approach: you start with a flavorful broth from slow-cooked meats, then add vegetables, pilota meatballs, and butifarras, and finish with thick noodles. Every component contributes to a deeply satisfying bowl that needs nothing more than crusty bread on the side.

Ingredients for Olla Aranesa
For 6 servings
- 300 g white beans, soaked for 12 hours (or half beans and half chickpeas)
- 1 chicken hindquarter
- 1 pork ear
- 100 g pork belly
- 1 ham bone
- ½ beef rib or 200 g beef shank
- ¼ head of cabbage
- 1 leek
- 1 or 2 carrots
- 1 celery stalk
- 2 potatoes
- 200 g ground pork
- 1 egg
- 2 tablespoons breadcrumbs
- 1 or 2 garlic cloves
- Fresh parsley
- Salt
- 125 g white butifarra sausage
- 125 g black butifarra sausage
- 125 g raw butifarra sausage
- 150 g thick noodles (no. 4)

How to Make Olla Aranesa Step by Step
1. Soak the beans
Start the day before by placing about 300 g of white beans in a bowl of water and letting them soak for at least 12 hours. If you prefer, you can do half beans and half chickpeas. This step is essential for even cooking and a creamy texture.

2. Clean the chicken and pork ear
Clean the chicken hindquarter of any leftover feathers and the pork ear of hair. The easiest way is to singe them with a kitchen torch and then scrape. Also, check that the inside of the ear is thoroughly clean.

3. Place the beans in a large pot
Once soaked, drain the beans and transfer them to a very large pot, ensuring it's big enough to hold all the ingredients comfortably.

4. Add the meats
Place the following meats on top of the beans in the same pot: the chicken hindquarter, pork ear, 100 g pork belly, 1 ham bone, and ½ beef rib (or 200 g beef shank).

5. Cover with water
Pour in enough water to just cover the ingredients. The rest of the water needed will be added in the next step.

6. Bring to a boil and stop the cooking three times
Bring the pot to a boil and immediately stop the boiling by adding a glass of cold water. Repeat this process a couple more times. This technique prevents the bean skins from breaking.

7. Simmer for 1 hour, skimming
Let everything simmer gently for 1 hour, skimming off the foam that rises to the surface with a wooden spoon or spatula. This removes impurities and gives the broth its characteristic clean taste.

8. Chop the vegetables
Meanwhile, chop the vegetables needed later: ¼ cabbage, 1 leek, 1 or 2 carrots (depending on size), 1 celery stalk, and 2 medium potatoes. Cut them into bite-sized pieces of similar size so they're easy to eat with a spoon. Set aside until needed, as adding them too early would overcook them.

9. Prepare the pilota meatballs
In a bowl, combine 200 g ground pork, 1 egg, 2 tablespoons breadcrumbs, 1 or 2 minced garlic cloves, chopped fresh parsley, and ½ teaspoon salt.

10. Mix the meatball mixture
Mix well with a fork or your hands until all ingredients are fully integrated. If needed, add a little more breadcrumbs. The mixture should be firm enough to form meatballs.

11. Shape the meatballs
Shape the meatballs into whatever size you prefer, either small ones to serve individually or one large ball that you'll later cut into portions. If desired, you can flour and fry them.

12. Add the vegetables to the pot
After the first hour of cooking, add the chopped vegetables you set aside earlier.

13. Cook for another 1.5 hours
Let it cook for another 1 hour and 30 minutes, or until the beans are tender. Keep the heat low and avoid a hard boil so the beans don't fall apart.

14. Add the butifarras and adjust salt
Once the beans are tender, add the butifarras: 125 g white butifarra, 125 g black butifarra, and 125 g raw butifarra. If you prefer, you can cook the black butifarra separately, but it's common to add it to the stew. Taste and adjust the salt.

15. Add the meatballs and cook 30 minutes more
Right after, add the pilota meatballs and let everything cook for about 30 more minutes.

16. Add the noodles
A little before the end of this time, depending on how long they need to cook, add 150 g thick no. 4 noodles and cook for the time indicated on the package.

17. Remove from heat, cut the meats, and serve
Finally, remove the pot from the heat, take out the meats, and cut them into serving portions. Bring to the table immediately and enjoy the olla aranesa piping hot, checking the salt one last time before serving.

Tips for the Best Olla Aranesa
Choose the right beans
The native Bossòst white bean is the most traditional choice, prized for its smooth texture and creamy broth. If you can't find it, any good-quality white bean works well. Some families mix in chickpeas or use them instead, so feel free to adapt to your taste.
Balance the meats and vegetables
Use a mix of chicken, beef with bone, and pork products like pancetta, butifarras, and ham bone for depth. For vegetables, winter staples like potato, carrot, leek, and cabbage are classic. You can also add celery or parsnip for extra flavor.
Master the pilota and cooking technique
The pilota is a seasoned meatball mixture of ground meat, parsley, breadcrumbs, and egg. You can shape it into small balls or one large piece, and add it raw or lightly fried. To keep the beans intact, stop the boiling with cold water a few times at the start and maintain a gentle simmer throughout.
