- 400 g potatoes
- 1 garlic clove
- 100 g onion
- 100 g green pepper
- Olive oil
- Salt
- 1 chorizo
- 1 morcilla
- 80 g Iberian ham, thinly sliced
- 2 eggs

How to Make Plato Alpujarreño Step by Step
1. Peel and Cut the Vegetables
First, prepare the patatas a lo pobre. Peel 400 g of potatoes and cut them into slices about half a centimeter thick. Slice 1 garlic clove thinly, and cut 100 g of onion and 100 g of green pepper into julienne strips.

2. Fry the Potatoes with Onion and Pepper
Place a skillet over high heat with plenty of olive oil and add the sliced garlic. When the oil is hot, add the potatoes along with the onion and green pepper. Fry over medium-high heat for the first 5 minutes. Then lower the heat to low and let everything cook for 25 minutes, stirring occasionally so the potatoes don't stick to the bottom.

3. Drain and Salt the Potatoes
After 25 minutes, remove the patatas a lo pobre from the skillet, draining off the oil well, and add salt to taste.

4. Fry the Chorizo and Morcilla
Now fry 1 chorizo and 1 morcilla. Place a skillet over medium-high heat with 1 tablespoon of olive oil. When the skillet is hot, add the chorizo and morcilla and fry for about 5 minutes, turning them every half minute or so. Then remove them from the skillet and place them on absorbent paper.

5. Fry the Eggs
In the same oil where the patatas a lo pobre were cooked, fry 2 eggs. Heat the skillet over high heat and fry the eggs, which you should have salted beforehand, one at a time. Remove the eggs from the skillet, draining off the oil well.

6. Plate the Dish
At this point, you can plate the plato alpujarreño. Arrange the patatas a lo pobre, the fried eggs, the chorizo, the morcilla and 80 g of Iberian ham cut into thin slices on a large platter or plate.
