How to Make Pollo al Ajillo Step by Step
1. Remove the Skin and Season the Chicken
For this recipe you need a chicken of about 1.5 kg, already cleaned and cut into pieces. We like to prepare it without the skin, so remove it almost completely, leaving it only on the wings, since skin releases a lot of fat when fried and we do not want that here. Season the chicken pieces with salt and pepper and set them aside while you fry the garlic.

2. Fry 3 Whole Garlic Cloves Until Golden
Heat 3 tablespoons of olive oil in a wide casserole. Make a cut in 3 whole unpeeled garlic cloves and fry them over low heat until golden, taking great care not to burn them. Set the remaining garlic aside to use later.

3. Remove the Garlic and Fry the Chicken in the Same Oil
Remove the garlic from the casserole and fry the chicken in the garlic-scented oil until golden on all sides. This step is very important for a flavorful result.

4. Peel and Slice the Rest of the Garlic
Meanwhile, peel and cut the rest of the cloves from the head of garlic into thin slices.

5. Add the Sliced Garlic to the Chicken and Cook Together

Next, pour in 200 ml of white wine and let it reduce for a few minutes.

9. Serve Freshly Made, Garnished with Parsley
