This recipe makes 2 generous servings.
- 500 g pork tenderloin
- Ground black pepper
- 1 garlic clove
- 1 small onion
- 50 g leek
- 1 Granny Smith apple
- 2 tablespoons olive oil
- Salt
- 50 ml brandy
- 275 ml beef broth
- 2 Golden apples
- 2 tablespoons brown sugar
- 2 tablespoons water

How to Make Pork Tenderloin with Apple Step by Step
1. Cut and season the pork
The first thing we are going to do is cut 500 g of pork tenderloin into rather thick medallions, about 3-4 cm thick. Once the tenderloin is cut, season it with ground black pepper on both sides.

2. Prep the vegetables and apple
Slice 1 garlic clove thinly, and cut 1 small onion and 50 g of leek into small dice. Peel 1 Granny Smith apple and cut it into rather thin slices.

3. Sear the pork and set it aside
Place a pot over high heat with 1 tablespoon of olive oil, and when the oil is very hot, add the tenderloin and brown it for about 2 minutes per side. Once the pork is browned, season it with salt, take it out of the pot, and set it aside.

4. Build the sofrito
In the same pot where we browned the pork, add 1 more tablespoon of olive oil, and when the oil is hot, add the garlic, onion, and leek. Stir well, add salt, and let it cook for about 6-7 minutes over medium heat.

5. Cook the apple with the sofrito
Next, add the apple, stir it into the sofrito, and cook for 10 minutes until it is very soft.

6. Add the brandy and broth
Now raise the heat and add 50 ml of brandy, letting it cook for 2 minutes so the alcohol evaporates. Then add 275 ml of beef broth and wait for it to come to a boil.

7. Simmer and blend the sauce
Cook for 10 minutes over medium-low heat, then blend everything with an immersion blender until you have a smooth, lump-free sauce.

8. Return the pork to the sauce
Add the pork medallions back into the pot along with all the juices they have released in the meantime.

9. Finish cooking the pork
Let the pork cook in the sauce for 5 more minutes over low heat, and it is ready to serve.

10. Start the caramelized apple garnish
Meanwhile, we are going to make some caramelized apple cubes to serve as a garnish. Peel 2 Golden apples and cut them into cubes, then place them in a pot with 2 tablespoons of brown sugar and 2 tablespoons of water.

11. Caramelize the apple
Over medium heat, let the apple cubes caramelize little by little, stirring from time to time, for about 7-8 minutes.

12. Plate and serve
Serve the pork tenderloin with apple alongside the caramelized apple, sprinkling a pinch of ground black pepper on top to taste.
