Puchero andaluz is the kind of dish that fills a kitchen with warmth long before it reaches the table. Born from humble, thrifty cooking, it brings together creamy chickpeas, a mix of chicken, beef and salted pork, and fresh vegetables like carrots, potatoes, celery, leek and turnip. Every ingredient melts into a deeply savory broth that tastes like Sunday lunch at home.
Making it is simple, though it asks for patience and a little care, the way traditional cooking always does. The secret is a long, gentle simmer that lets all the flavors fuse into one delicious, nourishing pot. Serve it as a complete one-dish meal, or split the broth into a noodle or rice soup and serve the meats and vegetables alongside.

In some areas it is finished with a sprig of fresh mint for a cool, distinctive aroma, and the cooked meats make a wonderful pringá sandwich. However you serve it, this is comfort food in its most authentic form.

Ingredients for Puchero Andaluz
Serves 6
- 400 g chickpeas
- Salt
- 500 g chicken thighs
- 300 g beef shank
- 200 g salted pork belly
- 1 white bone
- 1 ham bone
- 250 g salted pork ribs
- 2 chorizos (optional)
- 3 carrots
- 2 potatoes
- 2 celery stalks
- 1 leek
- 1 turnip
- Mint (optional)
- Noodles or rice, to taste (optional)

How to Make Puchero Andaluz Step by Step
1. Soak the chickpeas and blanch the meats
The night before, soak 400 g of chickpeas in water with a small handful of salt for 12 hours. When you are ready to cook, bring plenty of water to a boil in a large pot and add 500 g chicken thighs, 300 g beef shank, 200 g salted pork belly, 1 white bone, 1 ham bone, 250 g salted pork ribs and 2 chorizos. Boil for 5–10 minutes to remove excess salt and impurities, then set the meats aside and discard the water.

2. Simmer the meats with the chickpeas
Return the meats to a clean pot and cover with about 4 liters of water. Drain and rinse the soaked chickpeas, add them to the pot and bring to a boil. Once boiling, lower the heat and simmer the meats and chickpeas gently for 1 hour, skimming off any foam that rises to the surface.

3. Prepare the vegetables
Meanwhile, peel and cut 3 carrots, 2 potatoes, 2 celery stalks, 1 leek and 1 turnip into large chunks.

4. Add the vegetables and finish cooking
After the first hour, add the vegetables to the pot and simmer for another 90 minutes over low heat. By then the meats, chickpeas and vegetables should be tender and the broth concentrated; if not, cook a little longer, and add water if the liquid has reduced too much.

5. Strain the broth
When the meats, chickpeas and vegetables are tender, separate the meats from the vegetables and chickpeas, and strain the broth through a fine-mesh sieve. Adjust the salt if needed.

6. Serve the puchero
How you serve it is up to you: plate a little broth with chickpeas, vegetables, meats and a few mint leaves, or use the broth for a noodle or rice soup served separately from the meats and vegetables. You can also make a pringá by shredding some of the meats and mixing them with the pork belly into a rough paste.

Tips for the Best Puchero Andaluz
Soak the chickpeas overnight
A full 12-hour soak with a pinch of salt gives the chickpeas a soft, creamy texture and helps them cook evenly. Do not skip this step, or they will take much longer to become tender.
Skim and simmer gently
Keep the heat low throughout and skim off the foam that rises during the first hour. This keeps the broth clear and clean-tasting, letting the flavors of the meats and chickpeas concentrate slowly.
Serve it your way
Some families serve everything together in a bowl, while others strain the broth for a noodle or rice soup and serve the meats and vegetables on a separate plate. A sprig of mint and a pringá sandwich are classic finishing touches.
