Ranch style beans are a beloved staple in Texas, where they are served alongside classic Mexican dishes like tacos and enchiladas. This hearty pot of pinto beans simmers with smoky bacon, tomatoes, cumin and a splash of vinegar until the beans melt in your mouth and the sauce turns glossy and rich.

They pair beautifully with huevos rancheros or a piece of barbecue meat, and they even work as a main course with a little white rice. The only secret is the same as any legume stew: slow cooking and keeping an eye on the liquid level so nothing dries out.

The bacon adds a wonderful smoky depth, but you can leave it out for vegan ranch style beans. The jalapeño is optional too—skip it if you prefer no heat, or cook it with the sofrito if you love spicy food. Either way, you will end up with a comforting, flavorful dish that comes together with pantry staples.

How to Make Ranch Style Beans Step by Step

1. Soak the pinto beans

Cover 400 g of pinto beans with water and leave them to soak for at least 8 hours. This softens the beans and helps them cook evenly.

2. Chop and brown the bacon

Chop the smoked bacon into small pieces. In a deep pot, fry the bacon in 4 tablespoons of extra virgin olive oil until it starts to brown. When it turns crispy, remove it to a plate and set aside.

3. Sauté the onion and garlic

Finely chop 1 onion and 3 garlic cloves. Cook them over medium heat in the bacon fat for about 10 minutes, until the onion is very soft.

4. Add the tomato and seasonings

Add 1 tablespoon sweet paprika, 1 tablespoon ground cumin, 1 tablespoon panela, 400 ml crushed tomatoes, 100 ml wine vinegar, salt and freshly ground black pepper. Stir well and let it cook for another 10 minutes.

5. Add the beans and water

Drain the soaked beans and add them to the pot. Pour in enough cold water to cover the beans by about an inch (one finger).

6. Simmer until tender

Bring to a gentle boil and simmer over low heat for about 1 hour. Stir occasionally and check that the stew doesn't become too dry; add a little water if needed. After this time, check that the beans are tender and adjust the salt and spices.

7. Finish with bacon and serve

Return the bacon to the pot, give it a stir and serve the beans hot, garnished with chopped fresh parsley and 1 jalapeño chile sliced into rings.

Tips for the Best Ranch Style Beans

Keep the heat low

As with any legume stew, slow cooking is key. A gentle simmer allows the beans to soften gradually and the sauce to thicken without scorching.

Watch the liquid level

Check the pot occasionally and add a splash of water if it looks dry. You want a glossy, slightly thick sauce that coats the beans, not a watery broth.

Make it your own

For a vegan version, omit the bacon and use a little smoked paprika instead. If you love heat, cook the jalapeño with the sofrito; if not, leave it out or serve it on the side.
