Tagarninas esparragadas is a humble Andalusian dish that turns a simple wild green into something deeply satisfying. The greens are simmered until tender, then folded into a rustic sauce made from fried bread, garlic, cumin and sweet paprika. It is the kind of food that smells like a grandmother's kitchen and tastes even better with crusty bread.

If you are from western Andalusia, especially around Seville and Cádiz, you probably already know tagarninas, perhaps under the name cardillos. The cooking method called esparragá or esparragada is also used for spinach, chard and asparagus, but it shines brightest with these tender thistles. The sauce is thickened with a majado, a paste of fried bread pounded with garlic and spices.

To finish, eggs are cracked right on top and left to poach in the steam of the sauce. That runny yolk mingling with the paprika-stained broth is exactly why you will want a thick piece of bread to mop the pan clean. Serve it hot, straight from the skillet, and let everyone dig in.

Serves 2

  • 300 g tagarninas, peeled and chopped
  • Salt, to taste
  • 4 tablespoons olive oil
  • 30 g day-old bread, sliced
  • 2 garlic cloves
  • 1 pinch ground cumin
  • ½ teaspoon sweet paprika
  • 2 eggs

How to Make Tagarninas Esparragadas Step by Step

1. Rinse the tagarninas

Take 300 g of peeled and chopped tagarninas and give them 3 or 4 rinses in a large bowl. With each rinse, move them around with your hands so the dirt clinging to the stems loosens. Repeat the washing until the water runs completely clean, because you do not want any grit left in the final dish.

2. Boil the tagarninas

Once clean, fill a pot with plenty of water and a teaspoon of salt, and when it comes to a boil, add the drained tagarninas. Let them cook for 10 to 20 minutes until they reach the texture you like, either more firm or more tender depending on your preference.

3. Drain and reserve the broth

When the tagarninas are cooked, drain them well using a colander and set aside some of the cooking broth, which you will use later to make the sauce.

4. Fry the bread and garlic

While the tagarninas cook, you can prepare the majado in parallel. Heat 4 tablespoons of olive oil in a skillet and fry 30 g of day-old sliced bread on both sides. Add 2 peeled garlic cloves as well. The garlic needs to brown nicely on the outside without burning, otherwise it will turn bitter.

5. Make the majado

Immediately remove the skillet from the heat and transfer the garlic to a mortar. Crush it with a little salt to make a paste. Then gradually add the fried bread, crushing it as well, and finish your majado with 1 pinch of ground cumin. It should be well integrated. It does not need to be perfectly smooth, but the bread should break down well so no large lumps remain.

6. Bloom the paprika

With the majado ready, use the same skillet with the oil. Heat it a little and, when it is warm, sprinkle in ½ teaspoon of sweet paprika and stir right away so it releases all its aroma without toasting too much. Be careful, because if the paprika burns it turns bitter.

7. Add the majado and the tagarninas

Next, add the majado to the skillet along with the cooked tagarninas and sauté everything together for a couple of minutes so the flavors blend well.

8. Add broth and simmer

Then add the reserved cooking broth a ladle at a time until the tagarninas are almost completely covered. Stir well and simmer over medium heat for about 5 minutes, until the sauce thickens and gains body, but without letting it dry out completely. Adjust the salt at this point.

9. Crack the eggs on top

When the sauce looks just right, make a couple of hollows between the tagarninas and crack 2 eggs into them. Add a little salt to taste, cover the skillet and let them set over medium heat for about 3 or 4 minutes, as runny or as firm as you like.

10. Finish and serve

To finish, remove the skillet from the heat as soon as the eggs are set and serve the tagarninas esparragadas right away.

Tips for the Best Tagarninas Esparragadas

Wash the greens thoroughly

Tagarninas usually come with dirt stuck to the stems, so rinse them 3 or 4 times in a large bowl, moving them with your hands each time. Keep going until the water is completely clean so you never bite into grit.

Keep the paprika from burning

Add the sweet paprika to warm, not smoking, oil and stir immediately. If it toasts too much it turns bitter and can ruin the whole sauce, so take the skillet off the heat if you need to.

Serve with plenty of bread

The sauce made from fried bread, garlic, cumin and paprika is the best part, and the poached eggs make it even richer. Serve the dish with a good piece of bread so nobody leaves a drop behind.
