Zurracapote is a festive Spanish drink from La Rioja that blends red wine or clarete with citrus, cinnamon and sugar. It is often compared to sangria, but it macerates longer, sometimes up to a week, so the fruit and spice really perfume the wine.

Every home and peña gives it its own twist, which is why you will find many versions under the same name. Here you get two routes: a classic slow maceration and a quick version that simmers cinnamon with sugar first to speed things up.

Large container filled with zurracapote and fruit

Ingredients for Zurracapote

Serves 6

  • 1 75-cl bottle of red wine or clarete
  • 1 or 2 cinnamon sticks
  • 150 g sugar
  • 1 orange
  • ½ lemon
  • 1 peach (optional, if in season)

Ingredients for zurracapote including wine, cinnamon, sugar and citrus

How to Make Zurracapote Step by Step

1. Pour the wine into a large container

Open the 75-cl bottle of wine, whether red or clarete, and pour it into a wide container. A large pitcher or bowl gives you room to stir the fruit and spice later.

2. Make the cinnamon syrup for the quick version

For the quick version, put 1 or 2 cinnamon sticks and 150 g sugar in a saucepan and add just enough water to dissolve the sugar. Heat and cook for about 15 minutes so the cinnamon releases its flavor, then stir this syrup into the wine.

3. Add the sugar directly for the classic version

For the classic version, dissolve 150 g sugar directly into the wine and save the cinnamon to add with the fruit. Everything else is the same for both versions except the maceration time.

4. Cut the orange and lemon into pieces

Wash and cut 1 orange and ½ lemon into pieces. If you are using a peach, or even apple, wash and peel it first and remove the stone or seeds before adding it.

5. Add the fruit and juice to the wine with the cinnamon

Squeeze the orange and lemon pieces over the wine as you add them to the container. For the classic version, add the cinnamon sticks now. Let the mixture macerate for 2 days for the quick version or 1 week for the classic, stirring from time to time.

6. Strain the zurracapote and serve

After macerating, you can strain the zurracapote to remove the fruit and cinnamon, especially if it will be stored for several days so it does not keep macerating. Bottle it and keep it in the fridge, or serve it as is with the fruit for a rustic look. Enjoy it cold or at room temperature, to taste.

Tips for the Best Zurracapote

Choose your wine wisely

A fruity red or clarete works best because the citrus and cinnamon need a wine with enough character to stand up to them. Avoid heavily oaked wines, which can clash with the fruit.

Adjust the sweetness

The 150 g sugar is a starting point; taste after the first day and add a little more if you like it sweeter. Remember that the fruit will release its own juice as it macerates.

Use seasonal fruit

Peach is optional and best in season; apple is another common addition. Wash and peel any extra fruit and remove stones or seeds before adding it to the wine.
