Berenjenas Califales Recipe: Sweet Cordoban Eggplant Tapa

Berenjenas califales are one of the most beloved tapas of Córdoba, a city with a long Moorish culinary heritage. Thin slices of eggplant are dipped in a light beer batter, fried until golden, and then finished with a glossy reduction of Pedro Ximénez sweet wine.

The result is a beautiful contrast: the crisp, savory batter against the syrupy, raisin-like sweetness of the wine. It is a dish that looks elegant but comes together in about 40 minutes with just a handful of pantry ingredients.

Serve them hot, straight from the pan, so the coating stays crunchy. This recipe makes enough for four as an entrante or shared tapa.

How to Make Berenjenas Califales Step by Step

1. Make the Pedro Ximénez reduction

Put 200 ml of Pedro Ximénez wine and 75 g of brown sugar in a small saucepan. Whisk until the sugar dissolves, then set over high heat. Once it boils, lower to medium-low and cook for about 20 minutes, stirring occasionally, until it has a honey-like texture. Remove from the pan and set aside in a bowl to cool.

2. Cut the eggplant

Wash 1 eggplant well and trim both ends. Cut it into slices about half a centimeter thick, then cut each slice in half.

3. Soak in salted water

Place all the eggplant slices in a bowl of cold salted water and leave them to soak for about 15 minutes. This helps remove a little of the bitterness.

4. Mix the batter

Meanwhile, prepare the batter. In a bowl combine 150 g wheat flour, 150 ml beer, 1 beaten egg, 5 g baking powder, 2 sprigs of chopped fresh parsley, and a little salt. Whisk well until perfectly smooth and homogeneous.

5. Dry the eggplant well

After soaking, place the eggplant slices on a kitchen towel and pat them very dry with paper towels.

6. Batter the eggplant

Start coating the eggplant, ideally dipping each slice just as you are ready to fry it. Use tongs to dip them into the batter and let the excess drip back into the bowl.

7. Fry the eggplant

Heat 300 g of frying oil in a small saucepan or skillet over high heat. When the oil is very hot, fry the battered eggplant in batches of 2 or 3 so the oil temperature does not drop, about 1 minute per side until golden. Lift them out, drain well, and place on a platter lined with paper towels to absorb excess fat.

8. Serve with the reduction

Serve the berenjenas califales hot and freshly made, drizzled with the Pedro Ximénez reduction.

Tips for the Best Berenjenas Califales

Choose firm, glossy eggplant

When buying the eggplant, pick one with tight, shiny skin that feels firm to the touch. Soaking the cut slices in salted water for a few minutes helps tame any bitterness.

Fry in small batches

Batter the slices just as you fry them so the coating stays crisp, and fry only 2 or 3 at a time. Crowding the pan lowers the oil temperature and makes the batter greasy.

Serve immediately

Berenjenas califales are at their best served hot right after frying, while the crust is still crunchy and the sweet wine reduction is warm.
