Tender chunks of fresh tuna are nestled into a sweet, slow-cooked onion sofrito perfumed with sherry, bay leaf, oregano and sweet paprika. - 400 g fresh tuna
- Salt
- Ground black pepper
- 2 garlic cloves
- 3 onions
- 4 tablespoons extra virgin olive oil
- 1 splash of sherry wine
- Half a glass of fish stock or water (optional, if you want it with sauce)
- 1 bay leaf
- Half a teaspoon dried oregano
- 1 teaspoon sweet paprika

How to Make Atún Encebollado Step by Step
1. Season the tuna and prep the vegetables
Start by cutting 400 g of tuna into bite-sized cubes, season them lightly with salt and pepper and set aside. Peel and finely chop 2 garlic cloves, then cut 3 onions into thin julienne strips.

2. Slowly cook the onions
Heat 4 tablespoons of extra virgin olive oil in a skillet and sauté the garlic for 1 minute. Add the onion and cook over medium-low heat for about 45-50 minutes, stirring occasionally so it cooks evenly and turns soft and golden.

3. Add the sherry and reduce
Pour in 1 splash of sherry wine and add 1 bay leaf to the skillet with the onion. Turn the heat to high and cook for about 3 minutes until the sauce reduces slightly. If you want your atún encebollado with sauce, this is the moment to add half a glass of fish stock or water and let it simmer gently for a few minutes so the flavors come together.

4. Season and add the tuna
Season the onion with half a teaspoon of dried oregano and 1 teaspoon of sweet paprika, then add the reserved tuna. Stir gently and cook everything for 2 to 4 minutes over medium heat, depending on how you like your tuna and the size of the cubes. Do not cook it any longer than this or the fish will dry out.

5. Serve immediately
