Huevos Villaroy are a beloved Spanish tapa of hard-boiled eggs cloaked in a velvety béchamel, then breaded and fried until the outside turns crackly and golden. It's a dish that feels both homey and elegant, and it comes together with just a handful of everyday ingredients.
The contrast is what makes them irresistible: a creamy, nutmeg-scented sauce hugging tender eggs, all wrapped in a crisp shell. Serve them warm as a starter, a party bite, or the centerpiece of a light meal.
They're also wonderfully versatile. Pair them with a simple green salad for a starter, or with mashed potatoes or sautéed vegetables for a more substantial plate. Make them with quail eggs and they become a dainty one-bite appetizer.

Ingredients for Huevos Villaroy
Serves 4
- 45 g butter
- 45 g wheat flour
- 500 ml whole milk
- 5 g salt
- 2 g white pepper
- 2 g nutmeg
- 4 eggs
- Wheat flour, for coating
- Beaten egg, for coating
- Breadcrumbs, for coating
- Oil, for frying

How to Make Huevos Villaroy Step by Step
1. Make the béchamel base
Start by preparing the béchamel so it has time to cool before coating the eggs. Place a skillet over medium heat and add 45 grams of butter. Once melted, add 45 grams of wheat flour and toast it well.

2. Add the milk gradually
Pour in 500 ml of whole milk little by little, whisking constantly until it is completely incorporated.

3. Thicken the béchamel
Keep stirring with the whisk until the béchamel thickens.

4. Season and cool the béchamel
Add 5 grams of salt, 2 grams of white pepper, and 2 grams of nutmeg. Mix well, then transfer the béchamel to a wide container, cover with plastic wrap, and let it cool at room temperature.

5. Boil the eggs
While the béchamel cools, boil the eggs. Bring a pot of water to a rolling boil, then add 4 eggs and cook for 8 minutes.

6. Shock the eggs in ice water
Remove the eggs from the hot water and place them in a bowl of ice water to stop the cooking and cool them down.

7. Peel the eggs
Once the eggs have cooled, peel them and set aside until the béchamel has cooled completely.

8. Coat the eggs in béchamel
Coat the eggs in the now-cold béchamel, using a spoon to cover them evenly.

9. Chill the coated eggs
Place the eggs on a plate or container and refrigerate or freeze for 15–20 minutes so the béchamel sets and the eggs are easier to handle during breading.

10. Bread the eggs
Pass each egg through flour, then beaten egg, and finally breadcrumbs.

11. Fry until golden
Heat the oil, ideally to 180 ºC. Fry the eggs until golden. Remove from the oil and drain on paper towels to remove excess oil.

12. Serve immediately
Serve the Huevos Villaroy right away, while the coating is still crisp.

Tips for the Best Huevos Villaroy
Keep the béchamel thick
For this recipe to succeed, the béchamel must be thick enough to cling to the eggs and hold up during breading. If it's too thin, it will slide off and the coating will fall apart in the fryer.
Chill before breading
Refrigerating the béchamel-coated eggs is essential. The cold firmness makes them easy to handle and helps the coating stay intact when it hits the hot oil.
Fry at the right temperature
Aim for around 180 ºC (350 ºF). If the oil is too cool, the eggs will soak up grease; if it's too hot, the crust will brown before the inside warms through.
