Patatas a la importancia are a shining example of how a handful of humble ingredients can turn into something extraordinary. Born in Spain's post-war years, when families had to stretch every resource, this dish transforms simple potatoes into a luxurious meal by frying them in a golden batter and then simmering them in a rich, savory sauce.

What makes this recipe truly special is the double cooking: the potatoes are first coated in flour and egg, fried until crisp, then finished in a delicious sauce made with a majado of garlic, parsley, and saffron. The result is tender, flavorful, and unforgettable—perfect as a starter or as a main course alongside fried eggs.

Ingredients for Patatas a la Importancia
Serves 4
- 4 medium potatoes
- Salt
- 100 g wheat flour
- 2 eggs
- Olive oil (for the sofrito and for frying the potatoes)
- 2 garlic cloves
- A few saffron threads
- 50 ml white wine
- Half an onion
- 750 ml vegetable broth
- Parsley

How to Make Patatas a la Importancia Step by Step
1. Peel and cut the potatoes
Peel 4 medium potatoes, wash them, and cut them into slices about 1 cm thick. Dry them well on both sides so the coating sticks evenly, and season with salt to taste.

2. Coat the potatoes
Prepare one plate with about 100 g of wheat flour and another with 2 beaten eggs. Dip the potato slices first in the flour and then in the beaten egg.

3. Fry the potatoes
Heat a skillet over medium-high heat with one or two fingers of olive oil. When hot but not smoking, fry the coated potato slices on both sides until golden.

4. Drain the fried potatoes
Once fried, transfer the potatoes to a plate lined with paper towels to remove excess oil and keep them from getting greasy. Set aside.

5. Make the majado
In a mortar, mash a pinch of salt, 2 peeled and chopped garlic cloves, and a few saffron threads. Once mashed, add 50 ml of white wine.

6. Sauté the onion and add the majado
Sauté half a chopped onion in a pot with a couple of tablespoons of olive oil over medium-low heat for a few minutes. When the onion is soft, add the majado and cook until the wine reduces.

7. Add the potatoes and broth
Now add the fried potatoes to the pot and pour in 750 ml of vegetable broth.

8. Simmer and serve
Cook the potatoes in the pot for 30 minutes without stirring, as they could break apart. Just move the pot in circular motions so they absorb the sauce. Once done, sprinkle with chopped parsley and serve hot immediately.

Tips for the Best Patatas a la Importancia
Choose the right potatoes
Use medium-sized potatoes that hold their shape when cooked, such as Yukon Gold or similar waxy varieties. This ensures the slices stay intact during the long simmer.
Fry at the right temperature
Heat the oil until it's hot but not smoking—around 350°F (175°C). This gives the coating a crisp, golden crust without absorbing too much oil.
Don't stir while simmering
Resist the urge to stir the potatoes during the final cooking. Instead, gently swirl the pot to prevent them from breaking apart while they soak up the flavorful sauce.
