For 4 servings
- 800 g pork cheeks
- Salt
- Ground black pepper
- 1 leek
- 1 onion
- 1 carrot
- 4 garlic cloves
- 4 tablespoons olive oil
- 250 ml red wine
- 500 ml beef broth (or water)

How to Make Pork Cheeks in Red Wine Sauce Step by Step
1. Clean and season the pork cheeks
Check the 800 g of pork cheeks and remove any excess fat. If the butcher has not already done so, trim the membrane at the ends. Pat the meat very dry with paper towels, season with salt and pepper, and set aside.

2. Prepare the vegetables
Peel, wash, dry, and chop 1 leek, 1 onion, and 1 carrot. Finely chop 4 garlic cloves.

3. Sear the pork cheeks
Heat 4 tablespoons of olive oil in a wide pot over medium-high heat. When the oil is hot but not smoking, add the pork cheeks and brown them on both sides. Once they are golden, remove the pot from the heat, take out the cheeks, and set them aside.

4. Sauté the vegetables
Lower the heat to medium and, in the same oil, add the leek, onion, and carrot. Sauté for about 10-15 minutes until well softened, stirring often to prevent burning. When the vegetables are tender, make a well in the center, add the chopped garlic, cook for 1 minute, and mix well.

5. Return the pork cheeks to the pot
Once the vegetables are ready, return the pork cheeks to the pot along with all the juices they have released.

6. Add the red wine
Pour in 250 ml of red wine and mix well with the meat and vegetables. Bring to a boil and let it cook for about 10 minutes over medium heat.

7. Add the broth and simmer
Add 500 ml of beef broth to the pot or, if you don't have it, water infused with aromatic herbs (bay leaf, thyme, a leek leaf…). Cover, bring to a boil, and simmer the pork cheeks over medium-low heat for about 1 hour and a half, until tender and juicy and practically falling apart with a fork.

8. Remove the cheeks and blend the sauce
When the pork cheeks are ready, take them out of the pot and transfer the remaining contents (vegetables and sauce) to a blender and process until smooth. If you added any aromatic herbs like bay leaf, remove them beforehand.

9. Combine the sauce and cheeks
Return the blended sauce to the pot with the pork cheeks. If the sauce is too thick, add a little water or broth to adjust the texture, and season with salt and pepper. Bring to a boil for a couple of minutes and serve immediately, or let it cool and refrigerate until the next day for even more flavor.

10. Serve with your favorite side
Serve the pork cheeks with a side of your choice. We chose mashed potatoes. For a pretty plate, either spread a layer of mashed potatoes on the bottom, add the cheeks, and spoon sauce over the top, or put a thin layer of sauce on the base, mashed potatoes on one side, cheeks on the other, and drizzle with more sauce. You can also bring extra sauce to the table in a gravy boat.
