Turrón de yema tostada is one of the most beloved sweets of the Spanish Christmas table, and it is surprisingly easy to make at home. A silky paste of egg yolks, orange zest, sugar syrup and ground almonds is pressed into a loaf, chilled until firm, then finished with a crackly layer of burnt sugar on top.

The result is unctuous and intensely flavorful, the kind of homemade turrón that quickly becomes a family favorite. It is said to have been born from the need to use up the egg yolks left over from making other traditional turrones, and some trace its burnt-sugar finish to crema catalana.

You only need a handful of easy-to-find ingredients. A dedicated turrón mold is ideal, but an elongated loaf pan, a long lunch box, or even the base of a cut-open carton will work just as well.
Ingredients for Turrón de Yema Tostada
For 8 servings (1 loaf)
- 3 egg yolks
- The zest of 1 orange
- 100 g sugar
- 30 ml water
- 230 g ground almonds
- Powdered sugar for the finish

How to Make Turrón de Yema Tostada Step by Step
1. Mix the yolks with the orange zest
Put 3 egg yolks in a large bowl with the zest of 1 orange and stir gently with a whisk. Do not beat, since you don't want the mixture to take on air. Set aside.

2. Make the sugar syrup
Prepare a syrup with 100 g sugar and 30 ml water. Put them in a small saucepan and bring to medium heat until the sugar melts completely. It needs to reach 115 ºC, the soft-ball stage.

3. Check the soft-ball stage
If you don't have a sugar thermometer, take a little syrup with a teaspoon and drop it into a glass of cold water: if it forms a soft ball when pressed between your fingers, it is ready. You can also judge by eye: once the syrup has simmered gently for about 5 minutes and is slightly thick, you can take it off the heat.

4. Stream the syrup into the yolks
Start pouring the hot syrup in a thin stream into the bowl of yolks, whisking quickly so the yolks don't set unevenly. Once all the syrup is incorporated, keep stirring until the mixture cools slightly.

5. Add the ground almonds
Add 230 g ground almonds to the bowl in two batches and mix well with a spoon or spatula. The result should be a smooth, homogeneous paste.

6. Prepare the mold
Prepare your chosen mold by dusting it generously with powdered sugar or lining it with parchment paper. This matters because the yolk turrón sticks a lot and can make unmolding tricky.

7. Fill and smooth the mold
Place the turrón paste in the mold and smooth the surface with the back of a spoon.

8. Cover, weigh and chill
Cover with a piece of parchment paper, place a weight on top and let it rest in the fridge for at least a full day, ideally two. The turrón will compact and take on flavor and color.

9. Unmold and dust with sugar
Once the resting time is up, you can unmold the turrón. Run a knife along the sides of the mold to trim any edges, then unmold carefully so it doesn't lose its shape. You could serve it as is, but to give the surface a toasted finish, cover the loaf generously with powdered sugar.

10. Burn the sugar
Burn the sugar with a kitchen torch or a burner. If you don't have these tools, place the turrón on the highest rack of the oven with the broiler on full until the sugar layer on top caramelizes.

11. Cut into portions
To make it easier to enjoy, cut the turrón into portions.

12. Serve
Serve and enjoy this delicious and delicate Christmas dessert.

Tips for the Best Turrón de Yema Tostada
Choose quality ingredients
The better the eggs and the almonds, the more flavorful your turrón de yema tostada will be. Take care of this and you'll get a ten-out-of-ten sweet with very little effort.
Improvise a mold if needed
A dedicated turrón mold is available at any baking shop for a good price, but if you don't have one, an elongated mold, a long lunch box, or even a mold improvised by cutting the side of a carton and using its base works beautifully.
Don't skip the chilling time
The weighted rest in the fridge is what compacts the turrón and develops its flavor and color, so give it at least a full day and ideally two before unmolding.
