Chocolate stuffed magdalenas are little Spanish sponge cakes with a surprise molten chocolate center. They are soft, tender and incredibly easy to make at home, no special equipment required.

The batter comes together in minutes with basic pantry staples, and a chilled chocolate or hazelnut spread gives each bite a creamy, irresistible filling. They are perfect for breakfast with coffee or as a sweet afternoon snack.

Ingredients for Chocolate Stuffed Magdalenas
Makes 6 magdalenas
- 60 g sugar (plus a little more for sprinkling on top)
- 1 medium egg
- 65 ml olive oil
- 25 ml milk
- 80 g wheat flour
- 4 g baking powder
- 50 g cold chocolate or cocoa and hazelnut spread

How to Make Chocolate Stuffed Magdalenas Step by Step
1. Beat the egg with sugar and preheat the oven
Preheat the oven to 220 ºC. Beat 60 g of sugar with 1 medium egg in a bowl for 3 minutes, until you get a whitish mixture.

2. Add the oil
Pour in 65 ml of olive oil little by little while continuing to beat until it is fully incorporated.

3. Add the milk
Stir in 25 ml of milk while beating so it blends well with the rest of the ingredients.

4. Add the flour and baking powder
Add 80 g of wheat flour mixed with 4 g of baking powder to the mixture. At this point, you can chill the batter in the fridge to cool it down.

5. Fill the paper liners with half the batter
Fill the paper liners with half of the batter, dividing it evenly.

6. Spoon the chocolate spread over the magdalenas
Distribute 50 g of cold chocolate spread with the help of two small spoons over each magdalena. The chocolate should sit in the center, as shown in the photo.

7. Cover with the rest of the batter and sprinkle with sugar
Spread the remaining batter over the chocolate and sprinkle each magdalena with a little sugar.

8. Bake the stuffed magdalenas at 180 ºC
Lower the oven temperature to 180 ºC and bake the stuffed magdalenas with top and bottom heat for 12-14 minutes, until the batter is completely cooked.

9. Let them cool completely
Remove the tray from the oven, take the magdalenas out of the metal mold and let them cool completely on a wire rack.

10. Serve them
Once cold, they are ready to serve and enjoy this sweet bite.

Tips for the Best Chocolate Stuffed Magdalenas
Keep the chocolate filling cold
It is important that the chocolate or cocoa and hazelnut spread is cold so the final texture is nice and creamy. You can also freeze the chocolate spread in ice cube trays the day before to place it more easily in the center of each magdalena.
Try other sweet fillings
You can fill these delicious magdalenas with other sweet creams such as jams, pastry cream, dulce de leche or any other of your choice, following these same steps.
Use the right proportions and serve them cold
For the magdalenas to always turn out perfect, use the right proportions and keep these aspects in mind. These magdalenas are served once they have cooled completely. To enjoy them, nothing beats pairing them with a coffee with milk at breakfast or a drink of your choice for a sweet afternoon snack.
