Ingredients for Panisse

- 250 g chickpea flour
- 900 ml water
- 1 teaspoon salt

- 1 teaspoon chopped chives

How to Make Panisse Step by Step
1. Mix the Chickpea Batter
Place 250 g of chickpea flour in a wide saucepan and pour 900 ml of water into a jug. Add about one third of the water while whisking to prevent lumps from forming. Then pour in the rest of the water, 1 teaspoon of salt, and 1 tablespoon of extra virgin olive oil, and whisk again until fully integrated.

2. Cook Until Thick
Cook the chickpea mixture over medium-low heat for 10 minutes, stirring constantly. It is ready when the dough pulls away from the sides of the saucepan and holds together as a thick mass.

3. Spread and Chill
Pour the mixture into a mold lined with parchment paper. A 25 x 20 cm rectangular mold works well, but you can also spread it across several molds or trays, keeping the thickness at about two fingers high. Let it cool for 2 hours, or cover and refrigerate overnight.

4. Make the Garlic Sauce
While the dough cools, mix 3 tablespoons of mayonnaise with 1 pressed garlic clove, 1 teaspoon of chopped chives, and 1 teaspoon of chopped parsley in a bowl. Taste, season with salt as needed, and keep the sauce chilled until serving.

5. Cut into Batons
Once the dough is cold and firm, cut it into batons about 10 cm long. Pat them dry thoroughly with kitchen paper to remove any condensation, which helps prevent splattering when they hit the hot oil.

6. Fry the Panisse
