This makes 4 servings.
- 400 ml red wine
- 2 or 3 tablespoons sugar
- 1 cinnamon stick
- 1 lemon
- 4 peaches

How to Make Peaches in Wine Step by Step
1. Heat the Wine
Pour 400 ml of red wine into a skillet or pot wide enough to later hold the peach halves in a single layer without crowding. Turn on the heat and warm the wine over medium heat. Once it comes to a boil, let it bubble for about 2 minutes to evaporate some of the alcohol. You can also flambé it if you like, carefully and always with the extractor hood off.

2. Add Sugar, Cinnamon and Lemon Peel
Next, stir in 2 or 3 tablespoons of sugar and 1 cinnamon stick broken in half. Peel 1 lemon, taking care not to include the white pith so it does not turn bitter. Lower the heat to medium-low and keep it cooking for about 10 minutes so the cinnamon and lemon infuse into the wine.

3. Peel the Peaches
Meanwhile, cut 4 peaches in half following the natural line of the fruit. To separate the halves, twist both sides in opposite directions around the pit. With a small knife, carefully cut around the pit and remove it. Finally, peel each half with the knife or a peeler, trying not to break them.

4. Cook the Peaches in the Wine
With the wine infused and the peaches peeled, place the peach halves in the skillet with the pit hole facing down. Cook the peaches for 10 minutes over medium-low heat.

5. Flip and Cook the Other Side
After that time, carefully turn each half over, using a couple of forks to help you, but avoid piercing the flesh because it will be very soft and you risk breaking them. Continue cooking for another 10 minutes on this other side.

6. Reduce the Sauce
When they are ready, carefully remove the peaches and place them in a separate container. Also remove the cinnamon stick and lemon peel, leaving only the wine in the skillet. Cook over medium heat for a few minutes, stirring from time to time, until you get a thicker, shinier liquid. You will know the sauce is ready when you can draw a line through it with a spatula and it does not close immediately, as shown in the image below.

7. Rest Overnight in the Fridge
Finally, cover the peaches with the reduced wine. Wait for it to lose some heat. Then cover and store the peaches in wine in the fridge until the next day. You can serve them cold or at room temperature.

For the best results, pick peaches that are ripe but still firm. If they are too green, they will need more cooking and have less flavor. On the other hand, if they are very soft, they will be harder to peel and most likely will break when you turn them, take them out of the sauce, or serve them. As for the variety, you can use any. Yellow, white, or even blood peaches. However, the first ones, the classics, work best because they hold their shape better during cooking.
Customize the Sauce
