Hake in tomato sauce is one of the most popular fish dishes in Spanish homes, and for good reason: it comes together in about half an hour and delivers rich, satisfying flavor with very little effort. Golden-seared hake fillets are nestled into a sofrito of onion, sherry and fried tomato, then finished with a shower of fresh parsley.

The dish relies on fried tomato, either homemade or a good store-bought jar, which keeps the prep quick and the result reliably tasty. It is ideal for a midday menu or a fast dinner, and the sauce does most of the work while you get on with the rest of the meal.

How to Make Hake in Tomato Sauce Step by Step

2. Chop and sauté the onion

Meanwhile, peel 100 g of onion and chop it finely. Sauté it for 4 minutes over low heat in the same skillet, letting it soften in the oil left from the fish.

3. Pour in the wine and reduce

Pour 100 ml of sherry or white wine into the skillet and let it reduce, cooking off the alcohol and concentrating the flavor.

Tips for the Best Hake in Tomato Sauce

Watch the cooking point of the fish

Thick chunks of hake need more time than thin fillets, so adjust the cooking time to the thickness of each piece. Overcooking will dry the fish out, so pull it off the heat as soon as it is just done.

Customize the sauce

You can personalize this recipe by adding olives, bell pepper, leek or scallion to the sauce. For a more festive touch, stir in some shrimp and peas.

Choose the right side

Hake in tomato sauce is delicious served with white rice, wild rice or a simple green salad to round out the plate.
