This magic cake, also called intelligent cake, earns its name because a single batter transforms in the oven into three distinct layers, each with its own irresistible texture. It's a dessert that looks like a magic trick but comes together with just seven everyday ingredients and a whisk.

On the bottom you get a dense, almost flan-like base, in the middle a silky custard, and on top a light sponge. We've flavored ours with vanilla paste, though lemon zest works beautifully too if you want a citrusy twist.

The key is to fold the whipped egg whites into the batter without fully incorporating them—those little lumps of white are what create the layers as the cake bakes. Serve it chilled or at room temperature, dusted with powdered sugar and topped with fresh berries for a stunning finish.

How to Make Magic Cake Step by Step

1. Prepare the pan and preheat the oven

Grease and line a square baking pan, about 20 x 20 cm. Preheat the oven to 180 °C (350 °F) with both top and bottom heat.

2. Separate the eggs

Separate the egg whites from the yolks, placing the whites in a clean, grease-free bowl for whipping.

3. Whip the egg whites

Beat the egg whites to stiff peaks and set aside. They will be folded in at the end to create the cake's layers.

8. Keep lumps of egg white in the batter

The mixture should still have visible lumps of egg white—this is what creates the three layers of the cake.

9. Bake for 10 minutes at 180 °C, then 40 minutes at 160 °C

Bake for 10 minutes at 180 °C with top and bottom heat. Then lower the temperature to 160 °C with top and bottom heat and bake for 40 minutes, or until a toothpick inserted in the center comes out clean.

10. Let it cool in the pan

Let the cake cool completely in the pan, then unmold it.

11. Trim the edges of the cake

Use a knife to trim the edges of the cake so the three layers are clearly visible.

12. Serve

Serve cold or at room temperature and decorate as you like—for example, dusted with powdered sugar and topped with strawberries, raspberries, or any fruit you enjoy.

Tips for the Best Magic Cake

Don't overmix the egg whites

Stop folding as soon as the whites are streaked through the batter. If you mix until smooth, the batter will bake into a single uniform layer instead of three.

Use room-temperature ingredients

Softened butter and room-temperature eggs blend more easily into the batter, giving you a smoother base and a more even bake.

Let it cool completely before slicing

The custard layer needs time to set as the cake cools. Slicing too early will make the layers run together and lose their clean definition.
