Slices of boiled potato are draped in a silky, pale-gold huancaína sauce made from ají amarillo, queso fresco, evaporated milk and crackers, then finished with lettuce, hard-boiled egg and black olives.

Ingredients for Papa a la Huancaína
Serves 2
- 2 medium potatoes
- Salt
- 1 egg
- 3 tablespoons sunflower oil
- 1 garlic clove
- Half a red onion
- 3 tablespoons ají amarillo paste
- 1 thick slice feta-style fresh cheese (about 65 g)
- 80 ml evaporated milk
- 2 salt crackers
- 4 lettuce leaves
- 5-6 black olives

How to Make Papa a la Huancaína Step by Step
1. Boil the potatoes
The first thing we are going to do is boil 2 medium potatoes. To do this, wash the potatoes very well since we are going to boil them with the skin on, and place a pot over high heat with water. When the water starts to boil, add salt and the potatoes and let them cook over medium-high heat for about 25 minutes. Then, take the potatoes out of the pot and let them cool.

2. Boil the egg
While the potatoes are cooking, we are also going to boil 1 egg. To do this, put a small pot with water over high heat and when the water comes to a boil, add salt and the egg. Lower the heat a little and let the egg cook for about 10 minutes. After this time, remove it from the pot and let it cool.

3. Sauté the garlic and red onion
Place a frying pan over medium heat with 1 tablespoon of sunflower oil and when the oil is hot, add 1 garlic clove and half a red onion, both very finely chopped. Let the onion sauté for about 5 minutes.

4. Add the ají amarillo paste
Next, add 3 tablespoons of ají amarillo paste, mix it well with the sautéed vegetables and cook the mixture for a couple of minutes. Remove the pan from the heat so the sautéed mixture loses some of its temperature.

5. Add everything to the blender
When the sautéed mixture has cooled slightly, place it in a blender jug and add 1 thick slice of feta-style fresh cheese, 80 ml of evaporated milk, 2 salt crackers and 2 tablespoons of sunflower oil.

6. Blend until smooth
Blend these ingredients until you have a well-emulsified, homogeneous sauce with no lumps. At this point, adjust the salt if necessary.

7. Plate the potatoes with lettuce
Peel the boiled potatoes and cut them into fairly thick slices, about 1 cm thick. To plate the papa a la huancaína, place the potato slices on the base of a plate and arrange 4 lettuce leaves on the side.

8. Pour over the sauce and garnish
Finally, pour the huancaína sauce over the potatoes and place the halved boiled egg and about 5-6 black olives on top.
