Pasta alla Norma is Sicily's most beloved pasta dish, and for good reason: golden fried eggplant, fragrant garlic and basil, and a rich tomato sauce come together over rigatoni for a plate that tastes like sunshine. It's simple, deeply satisfying, and made with ingredients you probably already have in your kitchen.
The dish is named after Bellini's opera Norma, and it has the kind of bold, confident flavor that lives up to its theatrical name. The eggplant is salted first to draw out bitterness and moisture, then fried until tender and caramelized before being folded into a slow-simmered tomato sauce brightened with a splash of vinegar.
What makes this version special is the finishing touch: a generous amount of salty ricotta salata stirred into the sauce and sprinkled on top. If you can't find it, Parmesan or pecorino work beautifully as substitutes. Serve it with a glass of red wine and a hunk of crusty bread, and you'll have a weeknight dinner that feels like a Sicilian holiday.

Ingredients for Pasta alla Norma
For 4 servings
- 2 eggplants
- Salt
- 3 garlic cloves
- 7-8 fresh basil leaves
- 50 ml olive oil
- 1 tablespoon dried oregano
- 1 teaspoon dried cayenne pepper
- 700 g crushed tomatoes
- 1 tablespoon vinegar
- 400 g rigatoni
- 80 g grated ricotta salata (or Parmesan or pecorino as a substitute)

How to Make Pasta alla Norma Step by Step
1. Salt the eggplant
Start by cutting 2 eggplants into cubes of about 2 cm. Salt them and let them rest in a colander for about 20-30 minutes. This step helps them lose bitterness and moisture. Afterward, drain them and dry them with a little paper towel.

2. Prep the garlic and basil
While the eggplant rests, peel and thinly slice 3 garlic cloves and chop 7 or 8 basil leaves. Set these ingredients aside.

3. Fry the eggplant with aromatics
Once the eggplant is drained and dry, heat a skillet or pot with 50 ml of olive oil and fry the eggplant over medium heat along with 1 tablespoon of oregano. If needed, work in batches. After a few minutes, when the eggplant begins to release its water, add the 3 sliced garlic cloves, the chopped basil and 1 teaspoon of cayenne pepper.

4. Add the tomato and vinegar
When the eggplant is soft and golden, add 700 g of crushed tomatoes and 1 tablespoon of vinegar. Mix well and let the sauce reduce over low heat for about 15 or 20 minutes.

5. Cook the pasta
Meanwhile, cook the pasta. Bring a pot of salted water to a boil, add 400 g of pasta (we used rigatoni) and cook according to the package instructions (in our case, 12 minutes). Reserve a ladle of the cooking water and drain the pasta.

6. Combine the sauce and pasta
Next, stir 40 g of grated cheese — traditionally ricotta salata, though Parmesan or pecorino can be substituted — and the ladle of cooking water into the sauce. Combine the pasta and sauce in the same pot, stirring for 1 or 2 minutes over medium heat so everything integrates well. Adjust the salt if necessary.

7. Serve with remaining cheese
To finish, serve with the remaining 40 g of grated cheese and, optionally, garnish with a couple of small basil leaves.

Tips for the Best Pasta alla Norma
Choose the right cheese
The original recipe calls for ricotta salata, which can be hard to find outside Italy. Don't worry — Parmesan or pecorino are perfect substitutes and will give you that salty, savory finish the dish needs.
Pick your pasta shape
Short pasta is traditional here, with rigatoni being the most common choice (and the one we used). But feel free to use whatever pasta you have on hand — the sauce clings beautifully to almost any shape.
Don't skip the salting step
Salting the eggplant and letting it rest for 20-30 minutes draws out bitterness and excess moisture, which means it fries up golden and tender instead of soggy. It's a small step that makes a big difference.
