Repápalos Extremeños Recipe: Traditional Spanish Bread Balls

Repápalos extremeños are golden bread balls, a thrifty dish from Extremadura that grandmothers made with whatever was on hand: day-old bread, an egg, garlic and parsley. Fried until crisp and then simmered in a simple onion sauce, they turn humble ingredients into something deeply comforting.

This is a recipe from leaner times, so it stays close to the original method and proves how much flavor a short ingredient list can deliver. The sauce is made in the very same oil the bread balls were fried in, so every bit of their aroma stays in the pan.

They work beautifully as a starter or a first course, and the batch makes about 7 to 8 pieces, enough for two people. Serve them hot, straight from the pan, while the sauce is still bubbling.

How to Make Repápalos Extremeños Step by Step

1. Cut the bread into cubes

Cut 80 g of day-old bread crumb into small dice. Using only the crumb and leaving out the crust gives you a softer mixture, though the texture will also depend on the type of bread you use.

2. Beat the egg with garlic and parsley

Beat 1 medium egg in a bowl, season with salt and pepper, and add the bread along with 1 pressed garlic clove and 1 tablespoon of chopped fresh parsley.

3. Mix the bread mixture well

Stir the bread and egg mixture until everything is evenly combined. Let it come together into a cohesive mass so the balls will hold their shape.

4. Shape the portions

Shape the bread mixture into balls, rolling them with your hands. Keep them roughly the same size so they cook evenly.

5. Fry in hot oil

Heat 100 ml of olive oil in a skillet to about 180 °C and fry the bread portions, turning them so they brown evenly. Lift them out and set them aside on a plate.

6. Sauté the onion

Pour off part of the oil from the skillet, chop 50 g of onion and sauté it in the same pan for about 5 minutes over medium heat. Cooking in the frying oil keeps all the flavor of the bread balls in the sauce.

7. Toast the flour, add water and cook

Add 1 tablespoon of wheat flour to the skillet and toast it for 2 minutes. Stir, pour in 60 ml of water and cook over low heat for 5 minutes, then season with salt to taste.

Tips for the Best Repápalos Extremeños

Use the crumb, not the crust

Sticking to the soft crumb of day-old bread gives a smoother mixture, and the result varies with the bread you choose. Traditionally, a simple stale baguette was used to make the most of it.

Fry at the right temperature

Keep the oil around 180 °C and turn the balls as they fry so they brown evenly on all sides. Frying them first is what gives the dish its crisp outside before they finish in the sauce.

Build the sauce in the same oil

The onion is sautéed in the oil left from frying, which carries all the aroma of the bread balls into the sauce. This simple onion sauce is full of flavor and is what makes the dish so good with so few ingredients.
