Roscos de vino are snowy little ring cookies from Malaga, tender enough to melt on the tongue and fragrant with anise, lemon and sweet wine. Toasted flour and ground sesame give them a deep, nutty flavor that is very close to the classic polvorones.
They are a fixture of the Spanish Christmas table, but nothing stops you from baking a batch any time of year. The dough comes together quickly, rests for just 10 minutes, and the cookies bake in only 15 minutes.
This recipe makes 16 small rings, about 5 cm across, and finishes them with a generous coat of powdered sugar while they are still warm. Serve them with coffee, a glass of sweet wine, or as part of a holiday cookie spread.

Ingredients for Roscos de Vino
Makes 16 cookies
- 300 g wheat flour
- 100 g pork lard
- 1 teaspoon anise seeds
- 1 piece lemon peel
- 30 g sesame seeds
- 50 g sugar
- ½ teaspoon cinnamon
- 1 pinch salt
- 100 g sweet wine
- Powdered sugar, for coating

How to Make Roscos de Vino Step by Step
1. Toast the flour
Toast 300 g of wheat flour in the oven at 150 °C (300 °F) for 20–25 minutes, stirring occasionally so it browns evenly.

2. Infuse the lard
In a small saucepan, melt 100 g of pork lard and brown 1 teaspoon of anise seeds and 1 piece of lemon peel in it for 1 minute, without letting them burn. Strain and set aside.

3. Toast the sesame
Toast 30 g of sesame seeds for 5 minutes over low heat, until they begin to release their aroma.

4. Mix the dry ingredients
Sift the flour into a large bowl and add the toasted sesame, 50 g of sugar, ½ teaspoon of cinnamon and 1 pinch of salt. Mix well.

5. Add the lard and wine
Add the infused lard and 100 g of sweet wine. Mix and knead until all the ingredients come together.

6. Rest the dough
Press the dough into a ball and let it rest for 10 minutes.

7. Roll out the dough
Flatten the ball of dough on a sheet of parchment paper, cover with another sheet so it doesn't stick, and roll it out until you get a sheet about one finger thick.

8. Cut out the rings
While the oven preheats to 180 °C (350 °F), cut out the rings with a large cookie cutter and a small one (or, failing that, a glass and an apple corer).

9. Repeat with the scraps
Gather the leftover dough and repeat the process until all of it is used. With these quantities, you will get 16 rings about 5 cm in diameter.

10. Bake and coat in sugar
Bake the rings for 15 minutes at 180 °C (350 °F), then let them cool for a few minutes on a wire rack. While they are still warm, coat them in powdered sugar, pressing gently with your hand so the sugar sticks well, but being careful not to break the cookies.

11. Coat again if desired
If you like, repeat the coating for a whiter, sweeter finish. Once cool, they are ready to serve.

Tips for the Best Roscos de Vino
Choose the right wine
The most suitable wine for this preparation, given its origin, is a sweet Malaga wine such as Moscatel or Pedro Ximénez. These varieties provide the most traditional flavor for this recipe, but any sweet wine can be used to make the rings.
Swap the lard if you prefer
Pork lard can be replaced with extra virgin olive oil, using 10 g less and extending the baking time by a few minutes. Without the body the lard gives the dough, the rings need a little longer to firm up.
Try a chocolate finish
They are usually coated in powdered sugar while still hot, but you can also give them a dip in melted chocolate: a richer version that is well worth trying.
