Green beans with garlic paprika is one of those humble Spanish dishes that tastes far richer than its short ingredient list suggests. The beans are boiled until tender, then tossed in an ajada, the classic Galician sauce of olive oil, sliced garlic and sweet pimentón that is traditionally spooned over vegetables and fish.

It works just as well as a tapa-style starter as it does as a side dish next to roasted meat or fish. If you want to turn it into a main course, serve the beans with boiled potatoes and a fried or hard-boiled egg, and maybe a little chorizo browned in the pan.

Everything comes together in about 35 minutes with six ingredients you probably already have on hand. The only real trick is keeping the garlic golden and the pimentón off the heat, so the sauce stays sweet and fragrant instead of bitter.

  • 400 g green beans
  • Salt
  • 3 tablespoons olive oil
  • 3 garlic cloves
  • 1 teaspoon sweet pimentón (sweet paprika)
  • 1 teaspoon vinegar

How to Make Green Beans with Garlic Paprika Step by Step

1. Wash and cut the green beans

The first thing to do is wash 400 g of green beans very well, trim off the ends and cut them into regular pieces so they cook evenly.

2. Boil the green beans

Put a pot of water over medium-high heat and, once it comes to a rolling boil, add salt and the beans. Let them cook for about 20 minutes over medium heat, then drain them and set them aside.

3. Make the ajada with golden garlic

Now prepare the ajada. Set a skillet over medium heat with 3 tablespoons of olive oil and 3 garlic cloves cut into thin slices. Cook the garlic for about 2-3 minutes until it turns golden, taking care not to let it burn.

4. Add the pimentón off the heat

Next, pull the skillet off the heat and wait a few seconds for the oil to cool slightly, then add 1 teaspoon of sweet pimentón and mix it in well.

5. Finish the ajada with vinegar

After that, put the skillet back on the heat and, as soon as the oil is hot again, add 1 teaspoon of vinegar and cook for 1 minute.

6. Toss the beans in the ajada

Finally, add the green beans to the skillet, mix them well with the ajada and cook everything together for a couple of minutes over medium heat.

7. Serve the green beans right away

Serve the green beans with garlic paprika freshly made, while the ajada is still warm and fragrant.

Tips for the Best Green Beans with Garlic Paprika

Keep the garlic golden, never dark

Garlic goes from sweet and nutty to bitter in seconds, so stay close to the pan and pull it off the heat as soon as the slices turn light gold. Burnt garlic will ruin the whole ajada.

Add the pimentón off the heat

Sweet pimentón scorches easily and turns acrid in hot oil. Taking the skillet off the burner for a few seconds before stirring it in keeps the sauce sweet and bright red.

Turn it into a main course
