  • 500 ml thick cooking cream

How to Make Pear Vichyssoise Step by Step

1. Cut the Leeks

Start by washing the leeks well and cutting 3 of them into fairly even pieces so they cook uniformly. For this recipe you only need the white part, but reserve a few strips of the tender green part for the final garnish.

2. Sweat the Leeks

Heat a saucepan with 1 tablespoon of extra virgin olive oil over medium-low heat. Once the oil is hot, add the chopped leek and cook over medium heat for about 10-15 minutes until tender and almost translucent, without letting it brown.

3. Peel and Chop the Pears

Meanwhile, wash and peel 2 pears and cut them into fairly even pieces.

4. Add the Pears

When the leek is completely softened, add the pear and cook the mixture for a couple of minutes until the fruit softens slightly.

Next, add 250 ml of vegetable or chicken broth, depending on your preference, and cook the mixture over low heat for 10-15 minutes, until the pear is tender.
