R'fissa is a celebratory Moroccan stew where chicken and lentils simmer slowly with warm spices until the sauce turns deep and fragrant. It is the kind of dish that fills a kitchen with the scent of saffron, ginger, and ras el hanout long before it reaches the table.
What makes r'fissa truly special is the layering. Shredded msemen — flaky Moroccan flatbreads — soak up the rich broth, then the dish is crowned with chicken, lentils, stuffed dates, apricots, and wedges of boiled egg. Every bite is a mix of tender, savory, and sweet.
This is a project recipe, best started the night before so the chicken can marinate and the fenugreek can hydrate. The reward is a centerpiece worthy of a holiday or a gathering of people you love.

Ingredients for R'fissa
This makes 5 generous servings.
- ½ teaspoon fenugreek seeds
- ½ teaspoon freshly ground black pepper
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- ½ teaspoon saffron threads
- 1 pinch ground coriander seeds
- 1 teaspoon ras el hanout
- 18 g grated garlic cloves
- ½ tablespoon ghee, or clarified butter
- 60 ml water for the marinade
- ½ free-range chicken, cut into 4 pieces
- 150 g Moroccan lentils (or verdina or pardina lentils)
- 180 g grated onion
- 100 ml olive oil
- 400 g onions, finely julienned
- 5 g salt
- 8 g fresh parsley sprigs
- 10 g fresh cilantro sprigs
- 1900 ml water
- 220 g bread flour
- 45 g fine semolina
- 1 teaspoon sugar
- 1 teaspoon salt
- ⅛ teaspoon instant dry yeast
- 180 g water
- 100 ml vegetable oil
- 45 g medium semolina
- 50 g softened butter
- 8 dried apricots
- 1 tablespoon sugar
- 1 cinnamon stick
- 8 Medjool dates
- 40 fried almonds
- 2 boiled eggs, cut into quarters
- 8 peeled walnut halves

How to Make R'fissa Step by Step
1. Soak the Fenugreek Overnight
The day before, place 2 tablespoons of fenugreek seeds in a bowl and cover with hot water. Let them hydrate for at least 4 hours.

2. Make the Marinade
In a bowl, combine ½ teaspoon ground black pepper, 1 teaspoon ground ginger, 1 teaspoon turmeric, ½ teaspoon saffron threads, 1 pinch ground coriander seeds, 1 teaspoon ras el hanout, 18 g grated garlic, ½ tablespoon clarified butter, and 60 ml water. Mix into a paste. If it looks too dry, add a little more water.

3. Marinate the Chicken
Add ½ free-range chicken cut into 4 pieces to the marinade and rub it in well. Cover the bowl with plastic wrap and refrigerate overnight.

4. Soak the Lentils
The next day, put 150 g Moroccan lentils — verdina or pardina work too — in water to soak for half an hour before you start cooking.

5. Sauté the Grated Onion
Soften 180 g grated onion in 100 ml olive oil until the onion has released all its liquid.

6. Add the Chicken, Onions, and Herbs
Add the marinated chicken with all its marinade, 400 g julienned onions, and 5 g salt. Tie 8 g parsley and 10 g cilantro into a bouquet garni and add it. Pour in 100 ml of the 1900 ml water, mix, cover, and simmer gently for 10 minutes.

7. Add the Water and Fenugreek
Pour in the remaining water (1800 ml) and add the drained fenugreek seeds. Bring to a boil, lower the heat to minimum, cover, and cook for 30 minutes.

8. Cook the Lentils in the Stew
Drain the lentils, place them in a legume cooking bag, and add them to the pot. Stir the r'fissa and continue cooking uncovered until the lentils are tender, about 30 minutes. Take the pot off the heat and let it rest. This stew can be made a day ahead and reheated when you are ready to serve; the flavors and aromas will only deepen.

9. Mix the Dry Ingredients for the Msemen
In a bowl, combine 220 g bread flour, 45 g fine semolina, 1 teaspoon sugar, 1 teaspoon salt, and ⅛ teaspoon instant dry yeast.

10. Add the Water
Add 180 g warm water and mix with your hands until the water is absorbed. If the dough feels too dry, add a splash more water.

11. Knead the Dough
Knead by hand for 20 minutes, or in a stand mixer on medium-low speed for 10 minutes. The dough should be smooth, silky, and elastic, not sticky.

12. Shape and Rest the Dough Balls
With lightly oiled hands, form small balls of about 75 g each. Place them on a tray, cover with plastic wrap, and let them rest for 15 minutes.

13. Set Up Your Work Station
Set out a bowl with 100 ml vegetable oil, a bowl with 50 g medium semolina, and a bowl with 50 g softened butter. Oil your hands and the work surface, then quickly dip one dough ball into the vegetable oil.

14. Stretch the Dough into a Circle
Using your hands, stretch the dough into a circle as thin as you can manage.

15. Butter and Sprinkle with Semolina
Brush the surface of the dough with a little softened butter and sprinkle with medium semolina.

16. Fold into a Rectangle
Fold the top and bottom edges toward the center, then brush again with butter and sprinkle with more medium semolina. You will have a rectangle with slightly curved ends.

17. Fold into a Square
Fold the ends in to form a square. Set it aside on a tray brushed with vegetable oil and continue shaping the rest of the dough balls.

18. Stretch the Square Before Cooking
Heat a skillet — a crêpe pan works well — with a little vegetable oil. Take one square of dough, place it on your work surface, oil your hands, and stretch it until it doubles in size.

19. Cook the Msemen
Place the square in the skillet and let it brown on one side, then flip it. You can flip it a few times until it is cooked through, crisp, and marked with the characteristic golden spots.

20. Finish the Remaining Msemen
Remove from the skillet and continue cooking the rest of the dough squares. While the msemen is still hot — 1 or 2 minutes off the heat — hold it gently by the edges with both hands and move it lightly in a zigzag, as if fanning it delicately. This separates the thin inner layers and enhances its flaky texture.

21. Prepare the Apricots
Put 8 dried apricots, 1 tablespoon sugar, and 1 cinnamon stick in a saucepan. Cover with water and bring to a boil over very low heat for 10 minutes. Remove from the heat, drain, and let cool.

22. Stuff the Dates
Stuff 8 pitted Medjool dates with five fried almonds each and set aside.

23. Cut the Msemen into Strips
Roll up the msemen and cut them into thin strips. You can also tear them into pieces by hand.

24. Layer the Msemen and Broth
Place half of the msemen strips in a clay serving dish and drizzle with a little of the chicken and lentil stew broth.

25. Add the Second Layer
Cover with the other half of the msemen and drizzle with more r'fissa broth.

26. Place the Chicken in the Center
Set the chicken pieces in the center of the serving dish.

27. Arrange the Lentils
Remove the lentils from the cooking bag into a colander and arrange them in four thick lines running from the center to the edges of the dish.

28. Decorate and Serve
Finish with the apricots, each topped with a peeled walnut half, the stuffed dates, and 4 boiled eggs cut into quarters. Serve the r'fissa with two or three bowls of broth so each guest can add as much as they like.

Tips for the Best R'fissa
Fenugreek and Ras el Hanout Are Essential
For an authentic r'fissa, you really do need fenugreek — also called alholva — and the famous Moroccan spice blend ras el hanout. Both are sold in shops specializing in Middle Eastern ingredients. Ground ginger, saffron, black pepper, and turmeric round out the spices, while fresh cilantro and parsley bring the herbal notes.
What You Need for the Msemen
To make the msemen you will need bread flour, dry yeast, fine durum wheat semolina, and medium durum wheat semolina. You will also need butter and vegetable oil — olive oil works beautifully — for building the thin layers of dough. These flatbreads are sometimes replaced with rezzat el kadi, harcha, or even day-old bread.
How to Garnish Your R'fissa
The garnish can range from nothing at all to the classic Moroccan spread of fried almonds, peeled walnuts, dates, dried apricots, or honey-caramelized onions with chopped fried almonds. Follow your mood and what you have on hand.
