Trucha al ajillo is one of those Spanish dishes that proves how much flavor a handful of everyday ingredients can deliver. A whole portion trout is seasoned, dusted with flour and pan-fried until the skin turns golden and crisp, then finished with a warm garlic and parsley sauce loosened with a splash of apple cider vinegar.

It is quick, too. With two or three minutes per side in a hot pan, the fish cooks through while staying juicy, and the garlic majado comes together in the same skillet so nothing goes to waste. The vinegar cuts through the richness of the trout, keeping the whole plate bright and balanced.

Serve it straight from the pan with roasted potatoes, white rice or steamed vegetables, and you have a main course that feels special without any fuss.
Ingredients for Trucha al Ajillo
These amounts make one generous serving of trout.
- 1 portion trout (about 250 to 300 g)
- Salt
- Freshly ground black pepper
- 25 g wheat flour
- 30 ml olive oil
- 2 garlic cloves
- 1 bunch parsley
- 1 tablespoon apple cider vinegar

How to Make Trucha al Ajillo Step by Step
1. Clean the trout of bones
Before you start, ask your fishmonger to clean 1 portion trout. For this recipe you need a trout without the central spine and cut butterfly style. To make sure no bones remain, use tweezers to pull out any that are left.

2. Season and flour it
Once the trout is free of bones, season it with salt and freshly ground black pepper. Then put 25 g of wheat flour on a plate and coat the trout in it.

3. Fry the trout skin side down
Heat 30 ml of olive oil in a wide skillet. When the oil is hot, fry the floured trout over high heat for 2 to 3 minutes, starting with the skin side. This keeps the fish from sticking to the pan and gives the trout skin a crisp finish.

4. Turn it over
Turn the trout over very carefully, lower the heat and cook for another 2 or 3 minutes over medium heat. Take the trout off the heat and move it to the plate you will serve it on, covered with another inverted plate to keep it warm.

5. Make a majado with garlic and parsley
Make a majado in a mortar with 2 garlic cloves and 1 bunch of parsley.

6. Add apple cider vinegar
Add 1 tablespoon of apple cider vinegar to the majado, stirring it in so the garlic and parsley paste loosens into a sauce.

7. Cook the sauce
Take the majado to the skillet where you fried the trout. Fry the garlic over medium heat and pour in a couple of tablespoons of water to create a sauce to go with the trout, cooking it for a couple of minutes until it comes together.

8. Spoon the sauce over and serve
Spoon the sauce over the trout and serve immediately, accompanied by a side dish of your choice.

Tips for the Best Trucha al Ajillo
Oven alternative
Here we made the trout in a skillet. If you prefer to bake it, allow about 10 minutes at 180 °C with heat from above and below. For the first 8 minutes, bake the trout with just a little salt and pepper, then pour over the garlic majado, leave it a couple more minutes and it is ready. In a skillet the times are shorter: 2 or 3 minutes per side is enough.
Build the sauce in the same pan
The garlic majado is made separately, in the same skillet where the trout was fried. That way you use the flavor and the bits of flour left from frying to bind the garlic sauce. Finally, the sauce is poured over the trout so the fish takes on all the garlic flavor.
Balance the richness and get ahead
To lighten the richness of this fish, alongside the garlic we added apple cider vinegar to the majado, which can be swapped for lemon juice. Making and reducing the majado does not take long, but you can start the recipe with the majado and set it aside until you reduce it, so the trout does not go cold while you work. To accompany the trout we recommend roast potatoes, white rice or steamed vegetables.
