- 1 kg mushrooms
- 2 tablespoons olive oil
- 8 garlic cloves
- 100 ml white wine
- Salt to taste
- Freshly ground black pepper
- A few sprigs of parsley

How to Make Garlic Mushrooms Step by Step
1. Trim the stems
Before cooking the mushrooms, it is essential to clean them very well so you don't end up with the unpleasant grit they carry. The first thing to do is cut off the part of the stem that was in contact with the soil.

2. Clean each mushroom
Next, wipe each mushroom with a damp cloth or paper towel to remove any trace of dirt or grit. You can also give them a quick rinse and dry them immediately so they don't absorb moisture and turn limp.

3. Slice the mushrooms
The next step is to cut the mushrooms into slices, although you could also cook them whole if they are small.

4. Sauté the garlic
Heat 2 tablespoons of olive oil in a skillet and gently sauté 8 garlic cloves sliced not too thinly so they don't burn.

5. Add the mushrooms and cook
When the garlic starts to turn golden, add the sliced mushrooms and cook them for 6 to 8 minutes over high heat, stirring constantly so they cook evenly. After this time, the mushrooms will have reduced in volume by half.

6. Pour in the white wine
This is the moment to add 100 ml of white wine. Keep cooking the mushrooms for another 4 or 5 minutes until the wine has practically evaporated.

7. Season and add parsley
To finish, add salt to taste and freshly ground black pepper. Chop a few sprigs of parsley, previously washed and dried, and add them to the mushrooms with the skillet already off the heat.

8. Serve hot
Serve the garlic mushrooms hot as a tapa or as a side dish for meat and fish.

Tips for the Best Garlic Mushrooms
Be generous with the garlic
In this recipe we do not skimp on the garlic — it is an ajillo, after all — so the more the better. Also add a small glass of quality white wine, the kind you would later serve as an aperitif. And remember to always add the salt at the end, because if you add it at the beginning the mushrooms will release their water and steam instead of sautéing, which is what we want.
