- 4 garlic cloves
- 1 piece of fresh ginger, about 3 cm (1 1/4 inches)
- 1 fresh chile (or more or less to taste)
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1 onion
- 2 tablespoons olive oil
- 2 teaspoons mustard seeds
- 1 teaspoon cumin seeds
- 2 teaspoons ground coriander seeds
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon turmeric
- 1 1/2 teaspoons garam masala
- 400 g whole peeled tomatoes
- 800 g cooked chickpeas
- 1 small bunch fresh cilantro

How to Make Chana Masala Step by Step
1. Prep the Aromatics
Chop 4 garlic cloves, a 3 cm piece of fresh ginger and 1 fresh chile. Put them in a mortar. Juice half a lemon, add 1 tablespoon of the juice to the mortar and set the other tablespoon aside for later.

2. Pound the Aromatics with Salt
Add 1/2 teaspoon salt to the mortar and pound everything until you have a smooth, even paste. A blender works here too if you prefer. Set the mixture aside, then finely chop 1 onion.

3. Bloom the Whole Spices
Heat 2 tablespoons olive oil in a pan over medium-high heat, then add 2 teaspoons mustard seeds and 1 teaspoon cumin seeds. Cook them for a few seconds so they release their aroma.

4. Brown the Onion
Add the chopped onion and cook over medium-high heat, stirring constantly. After a few minutes, once the onion starts to brown and stick to the pan, add 1 tablespoon water and keep cooking for several more minutes until the onion is fully golden.

5. Add the Pastes and Ground Spices
Add the contents of the mortar to the pan. Stir in 2 teaspoons ground coriander seeds, 1/2 teaspoon ground black pepper, 1/2 teaspoon turmeric and 1 1/2 teaspoons garam masala.

6. Toast the Spices
Stir and cook the spices into the onion base for a few seconds so they bloom and turn fragrant.

7. Add the Tomatoes
Add 400 g whole peeled tomatoes and break them up with a fork.

8. Add the Chickpeas and Cilantro
Add 800 g cooked chickpeas, 1 small bunch fresh cilantro that has been washed, dried and chopped (reserve a little for garnish) and 1/2 cup water. Bring the mixture to a boil, then lower the heat to medium-low and cook covered for about 30 minutes, until the mixture has thickened.

9. Finish and Serve
After that time, add the 1 tablespoon reserved lemon juice, season with salt and pepper to taste, and serve the chana masala garnished with the reserved fresh cilantro.
