Chicken fricassee is a classic of French home cooking, a dish with roots stretching back to 16th-century cookbooks. The name is thought to come from the French verbs frire (to fry) and casser (to break), which neatly describe the two stages of the dish: browning the chicken first, then stewing it slowly until it is tender enough to fall apart.

Though its origins are French, this stew is neither complicated nor laborious. The real secret is a gentle, slow simmer, and mushrooms are the traditional companion since they round out the chicken beautifully. This version keeps things simple and classic, with a creamy sauce, bay leaf, parsley, and thyme.

Ingredients for Chicken Fricassee
This makes 4 generous servings.
- 1 whole chicken, 1.5 kg (or 4 breasts, 4 hindquarters, 8 drumsticks, 8 thighs)
- 1 onion
- 2 or 3 garlic cloves
- 300 g mushrooms or wild mushrooms
- 30 g butter
- 1 tablespoon olive oil
- Salt
- Juice of ½ lemon (or 100 ml white wine)
- 30 g flour
- 500 ml chicken stock
- 1 bay leaf
- 2 sprigs parsley or 1 teaspoon dried parsley (plus a little more for sprinkling)
- 3 or 4 sprigs fresh thyme or 1 teaspoon dried thyme (plus a little more for sprinkling)
- 200 ml heavy cream or crème fraîche (30% fat)
- 1 generous tablespoon Dijon mustard (optional)
- Ground black pepper

How to Make Chicken Fricassee Step by Step
1. Cut and Season the Chicken
For the most traditional result, use 1 whole 1.5 kg chicken and divide it into breasts, hindquarters, and wings. Cut the breasts in two, separate the thigh from the drumstick, and cut the wings in two as well, so each portion gets one piece of breast, one of thigh or drumstick, and one of wing. You can also use just 4 breasts, 4 hindquarters, or whatever combination you prefer. The dish works with or without skin; if leaving it on, remove any stray feathers. Season generously on both sides and set aside.

2. Chop the Onion and Garlic
Peel and finely chop 1 onion and 2 or 3 garlic cloves.

3. Clean and Cut the Mushrooms
Carefully clean 300 g of mushrooms, removing any traces of dirt by rubbing them with a damp cloth. Cut them into halves or quarters depending on size, though very small ones can be left whole.

4. Melt the Butter and Oil
In a wide pot over medium heat, melt 30 g of butter together with 1 tablespoon of olive oil, which helps keep the butter from burning.

5. Sauté the Mushrooms
Once the butter is fully melted and beginning to bubble, add the mushrooms to the pot and sauté for about 10 minutes, stirring often. Season with a little salt and remove them, leaving as much of the fat in the pot as possible.

6. Brown the Chicken Skin-Side Down
Pat the chicken skin dry with paper towels so it browns faster. Place the chicken skin-side down in the pot and brown over medium heat. Work in two batches without crowding the pot so the pieces brown properly rather than steaming.

7. Turn and Brown the Other Side
Once the skin has taken on color, turn the chicken pieces over and brown them on the other side, always over medium heat, watching so they color well without burning.

8. Set the Chicken Aside
Once browned on both sides, remove the chicken from the pot and rest it in a deep plate to catch the juices it releases. Repeat the process with the remaining chicken pieces.

9. Sauté the Onion and Garlic
Add the chopped onion to the pot and sauté over medium-low heat for about 10 minutes until tender, stirring often so it does not burn. Then add the chopped garlic, stir, and cook for 1 more minute, just until it releases its aroma.

10. Deglaze the Pot
Deglaze the bottom of the pot by pouring in the juice of ½ lemon (or 100 ml white wine) and scraping with a wooden spatula to loosen the browned bits stuck to the bottom.

11. Sprinkle in the Flour
Sprinkle in the 30 g of wheat flour, mix well, and cook for a couple of minutes to remove the raw flour taste.

12. Add the Cold Stock
Remove from the heat and pour in 500 ml of cold chicken stock. Whisk energetically and continuously so the flour dissolves and no lumps remain in the sauce.

13. Return the Chicken with Herbs
Return the chicken to the pot along with any juices it has released. Add 1 bay leaf, 2 sprigs of parsley, and 3 or 4 sprigs of thyme. If you like, tie the herbs into a bundle so they are easy to remove, though this is not strictly necessary. If you don't have fresh parsley or thyme, 1 teaspoon of each dried version works too. Bring to a boil over high heat.

14. Simmer Gently
When the stock begins to boil, lower the heat and simmer uncovered, at a gentle bubble, for about 35 minutes.

15. Add the Cream and Mustard
After that time, stir in 200 ml of heavy cream or crème fraîche (30% fat) and, if you like, 1 generous tablespoon of Dijon mustard to boost the flavor. Mix carefully to combine everything.

16. Season and Finish Cooking
Taste the sauce and adjust the salt, then season with ground black pepper to taste. Keep the mixture over low heat for 5 minutes, avoiding a rolling boil so the cream does not curdle. After those first 5 minutes, return the mushrooms to the pot.

17. Garnish with Fresh Herbs
Let everything cook for a final 5 minutes so all the flavors come together, then finish by sprinkling over a little more chopped parsley and some thyme leaves.

18. Serve or Let It Rest
You can serve the fricassee right away, or let it rest until the next day for maximum flavor.

Tips for the Best Chicken Fricassee
Brown in Batches for Better Flavor
Dry the chicken skin well and brown the pieces in two batches without crowding the pot. This gives the meat a deep golden color and builds the flavor base for the sauce instead of letting the chicken steam.
Keep the Cream from Curdling
Once the cream goes in, keep the heat low and avoid a rolling boil. Stir gently and let it heat through for 5 minutes before adding the mushrooms back, so the sauce stays smooth and silky.
Let It Rest for Maximum Flavor
This stew is even better the next day, once the herbs, mustard, and cream have had time to mingle. Make it ahead and reheat gently if you can wait.
