Cream of Boletus Recipe: Velvety Seasonal Mushroom Soup

This cream of boletus is a wonderful way to enjoy seasonal mushrooms. The boletus brings its deep, earthy flavor to a silky soup built on gently softened onion and potato, which thickens the cream without any flour or heavy cream.

A little garlic, butter and a splash of white wine round everything out, while vegetable stock keeps it light and smooth. The result is a soft, comforting cream that tastes far richer than its short ingredient list suggests.

Serve it as a first course or a light main, and if you like a bit of texture, hold back a few pieces of mushroom to stir in at the end. A handful of croutons on top makes it even better.

Tips for the Best Cream of Boletus

Build flavor on the onion base

Gently poached onion forms the base of this cream, and the diced potato is what gives it body and consistency. Take your time with the onion so it softens without browning.

Choose your stock

This version uses vegetable stock, but chicken stock works beautifully too if you want a slightly different flavor profile.

Finish with texture

Blend the soup very fine for a silky result, or leave some boletus in pieces if you enjoy finding chunks. A few croutons on top are a fabulous match for this smooth cream.
