Apple salmorejo is a fresh twist on the classic Spanish cold soup: ripe red tomatoes blended with apple instead of bread, plus garlic and a generous pour of virgin olive oil. The result is a silky, bright soup with a gentle sweetness that makes it perfect for warm days.

It comes together in about 10 minutes with just seven ingredients, and it is served well chilled with chopped hard-boiled egg and serrano ham on top. That contrast of cool, smooth soup and savory toppings is what makes this entrante so hard to resist.

For this version a Fuji apple works beautifully, though any red apple you enjoy will do just fine. Choose tomatoes at their peak of ripeness and a good extra virgin olive oil, since those two elements carry the whole dish.

Tips for the Best Apple Salmorejo

Pick ripe tomatoes and good oil

The secret of a good salmorejo, apple or traditional, lies in choosing good tomatoes at their optimal point of ripeness and a good extra virgin olive oil. Those two choices do more for the final flavor than anything else.

Choose the right apple

This version was made with a Fuji apple, though any other red apple you like will work wonderfully. Peel it and remove the core so the texture stays perfectly smooth.

Serve it well chilled

This dish is excellent as an entrante. Serve it very cold, leaving it about 2 or 3 hours in the fridge, which is the perfect time to bring it to its best. Like the traditional version, it shines with chopped hard-boiled egg and serrano ham, and the contrast of flavors is truly delicious.
