Cochinita pibil is one of Mexico's most beloved dishes, and this slow cooker version brings all that authentic flavor right into your kitchen with almost no effort. The pork marinates in a vibrant red recado rojo made with achiote and citrus, then cooks low and slow until it practically falls apart.

Thanks to the Crock Pot, you get that same meltingly tender texture that traditionally comes from an underground pit barbecue, without any of the fuss. Serve it piled into warm corn tortillas with pickled onions and fresh cilantro for an unforgettable taco night.

Ingredients for Cochinita Pibil
Serves 4
- 1 or 2 cloves
- 5 or 6 allspice berries
- ¼ teaspoon ground cumin
- 1 tablespoon oregano
- ½ teaspoon ground cinnamon
- ½ teaspoon ground black pepper
- 4 garlic cloves
- 1 teaspoon salt (more or less, to taste)
- 2 tablespoons achiote paste, or 1 if using powder
- 125 ml orange juice
- 125 ml lemon juice
- 800 g pork loin head or boneless shoulder

How to Make Cochinita Pibil Step by Step
1. Grind the Spices and Make the Marinade
Start by preparing the marinade, or recado rojo. In a mortar or spice grinder, grind 1 or 2 cloves and 5 or 6 allspice berries. Then add ¼ teaspoon ground cumin, 1 tablespoon oregano, ½ teaspoon ground cinnamon and ½ teaspoon ground black pepper. Peel 4 garlic cloves and crush or finely chop them. Add them to a bowl with the ground spices, 1 teaspoon salt and 2 tablespoons achiote paste (only 1 if using powder).

2. Add the Citrus Juices
Mix the spices well and dilute them by adding 125 ml orange juice and 125 ml lemon juice. It should become an intense red liquid with no lumps.

3. Cut the Pork into Cubes
Next, add 800 g pork loin head or boneless shoulder, previously cut into large cubes, to the bowl. They should be roughly the same size so they cook evenly.

4. Marinate the Meat Overnight
Stir well so the meat is completely coated in the recado rojo. Cover with a flat plate and let it marinate for 24 hours in the fridge, or if you don't have that long, a couple of hours at room temperature will do, but the longer the better.

5. Line the Crock Pot and Add the Meat
Once the marinating time has passed, line the bottom of the Crock Pot with 2 sheets of parchment paper. Take the meat out of the fridge and place it inside the pot, along with all the marinade from the bowl.

6. Cover the Meat with the Parchment Paper
Immediately after, cover the meat by folding the remaining parchment paper inward. Close it well so the vapors don't escape during cooking and the flavors concentrate inside the package.

7. Cook the Cochinita Pibil
Put the lid on the pot and cook for 4 hours on high or 6 hours on low. And there's nothing else to do. It's important not to open the package during cooking to keep the vapors in.

8. Check the Doneness of the Meat
When cooking has finished, carefully open the package without burning yourself on the trapped steam and check the texture of the meat. It should be very tender, falling apart at the touch. If it's still firm, you can leave it for 1 more hour.

9. Shred the Meat and Mix with Its Juices
Once ready, take the meat out of the pot, place it in a bowl and, using a couple of forks to avoid burning yourself, shred it. To finish, add all the juices that were left inside the pot and mix well.

10. Serve the Cochinita Pibil in Tacos
Now the cochinita pibil is ready to serve. To make the tacos, place the cochinita in corn tortillas and top with pickled onion, fresh chopped cilantro and, if you like, a little habanero chile salsa or your favorite taco sauce. Enjoy!

Tips for the Best Cochinita Pibil
Use Good Achiote Paste
The key to cochinita is the recado rojo, the marinade that flavors the meat. Its distinctive color and taste come mainly from achiote. If you've never cooked with achiote, get ready to discover a surprising ingredient. It can be found easily in Latin American stores, specialty supermarkets or online. Be careful, because it stains quite a bit, so use utensils that won't pick up color.
Swap Bitter Orange for Citrus Juices
Another essential ingredient of the recado rojo, and one we don't have here, is bitter orange. While it's true that it's an essential component of the marinade because it adds a perfect acidity to balance the pork's richness and help it become more tender, we can easily replace it with regular orange juice mixed with lemon juice in equal parts.
Parchment Paper Instead of Banana Leaves
In traditional preparation, the meat is wrapped in banana leaves to protect it from direct contact with heat and earth. If you can find them, remember that first, before using them, you need to heat them lightly in a dry pan or over a flame to make them more flexible so they don't break. As an alternative to banana leaves, as in our case, you can use parchment paper. Although we'll miss a slight flavor nuance, it perfectly fulfills the job of keeping moisture in and achieving that luscious texture we love.
