Roast lamb shoulder is the kind of dish that turns an ordinary Sunday into a celebration. The meat roasts slowly until it is so tender it practically falls off the bone, while the potatoes soak up all the wine, rosemary and pan juices underneath.

This is a traditional Spanish oven roast that never fails, and it needs only ten minutes of hands-on work. A splash of white wine and a squeeze of lemon keep the rich lamb balanced and bright, and the drippings turn into a concentrated sauce you can spoon over everything.

Ingredients for Roast Lamb Shoulder
These amounts make 4 generous servings.
- 1 lamb shoulder, about 1.2 kg (2 lb 10 oz)
- Salt
- Freshly ground black pepper
- 600 g (1 lb 5 oz) potatoes
- 1 onion (optional)
- 3-4 sprigs fresh rosemary
- 30 ml (2 tbsp) extra virgin olive oil
- 200 ml (3/4 cup plus 1 tbsp) white wine
- 200 ml (3/4 cup plus 1 tbsp) water
- Half a lemon

How to Make Roast Lamb Shoulder Step by Step
1. Season the lamb
First, preheat the oven to 220 ºC (428 ºF) while you get the ingredients ready. Make 2 or 3 cuts in the 1.2 kg lamb shoulder so it cooks evenly and the juices can penetrate the meat, keeping it extra juicy. Then rub salt and freshly ground black pepper all over the lamb on every side.

2. Cut the potatoes and onion
Next, peel and slice the 600 g of potatoes into rounds about half a centimeter thick, and cut 1 onion into fine julienne strips. The onion is optional, though it adds a sweet note that complements the roast beautifully. If you prefer, you can use a few garlic cloves cut in half instead, or leave both out to taste.

3. Build the roasting tray
Set out a large roasting tray that comfortably fits the lamb, and spread the potatoes and the onion, if using, across the base. Add salt and a little more freshly ground black pepper. Place the seasoned lamb shoulder on this bed of potatoes, then scatter 3 or 4 sprigs of fresh rosemary and 30 ml of extra virgin olive oil over the top.

4. Add the wine, water and lemon
Pour 200 ml of white wine and 200 ml of water over the lamb and potatoes, which will help create a delicious sauce. Squeeze the juice of half a lemon over the lamb to add a fresh touch and balance the flavor of the meat.

5. Roast and baste
Roast the lamb for 20 minutes at 220 ºC to give it a good golden start. Then take it out of the oven, spoon the pan juices over it and lower the temperature to 190 ºC (374 ºF). Keep roasting for 1 hour, or until the meat is so tender it pulls away from the bone and the potatoes are tender and golden. While it roasts, baste the lamb every 15 minutes and turn it over so the surface doesn't dry out.

6. Serve with the potatoes and sauce
Serve the lamb shoulder with the roasted potatoes and the sauce. You can strain the sauce and offer it separately in a gravy boat, or simply pour it directly over the roast before bringing it to the table.

Tips for the Best Roast Lamb Shoulder
Control the temperature for tender meat
To get meat that is golden outside and tender inside, the secret is managing the oven temperature and time. Start high so the meat seals and forms a golden, crisp crust. Then lower the heat so the shoulder cooks slowly, softening until it practically slides off the bone.
Balance the richness with wine and lemon
The lamb is accompanied by oven potatoes with onion, though you can swap the onion for garlic cloves or skip it entirely. To balance the intensity and fattiness of the lamb, a touch of freshness comes from the lemon juice and white wine, which also boost the aromas and flavors during cooking.
Make the most of the pan juices
The final result is a juicy, aromatic dish thanks to the juices you collect and strain to make the sauce. This concentrated sauce can be served on the side so each guest adds as much as they like, or poured directly over the lamb when you present it.
