  • 1 kg ripe pear tomatoes
  • 1 small Italian green pepper
  • Half a cucumber
  • 1 small garlic clove

1. Prepare the tomatoes

First, wash 1 kg of ripe tomatoes thoroughly. Remove the stems and cut them into chunks. You can leave the skins on, though peeling them is an option if you prefer a smoother texture.

2. Chop the vegetables

Wash, dry, peel, and chop the remaining vegetables: 1 Italian green pepper (remove the stem and seeds), half a cucumber (peel it entirely, partially, or not at all, depending on your preference), 1 small garlic clove (remove the germ to prevent repeat flavors), and half a fresh onion (remove the outer layer).

3. Combine in the blender

Place the chopped tomatoes and vegetables in a blender jar along with 1 piece of day-old bread torn by hand. Add 1 tablespoon of sherry vinegar, 1 glass of cold water (or as needed for desired texture), and 1 teaspoon of salt.

4. Blend and emulsify
