Korokke are a beloved Japanese specialty that share a striking resemblance to the croquettes many of us grew up with. Beneath a crisp, golden panko coating lies a creamy filling made from mashed potato and savory ingredients like ground beef, one of the most traditional fillings of all.

It is said that this popular Japanese preparation may trace its roots to its Western cousin, the French croquette. While the French version is built on béchamel rather than mashed potato, the two share a clear family resemblance: a creamy mixture with meat or other fillings, breaded and fried until irresistibly crisp.

For this version we went with the classic beef-filled korokke, though the dish welcomes all kinds of fillings such as vegetables, cheese, or seafood. They are wonderfully easy to prepare and endlessly adaptable, making them ideal for everything from a special-occasion appetizer to a quick lunch or dinner.

Ingredients for Korokke
This recipe makes 12 korokke, perfect as an appetizer or light meal.
- 500 g peeled potatoes
- 1 small onion, finely chopped
- 150 g ground beef
- 1 pinch salt
- 1 pinch ground white pepper
- 1 pinch ground nutmeg
- Wheat flour, for breading
- 1 or 2 eggs, beaten, for breading
- Panko or breadcrumbs, for breading
- Oil, for frying

How to Make Korokke Step by Step
1. Boil the Potatoes
Start by boiling 500 g of peeled, washed potatoes for about 20-30 minutes, until they are completely cooked through. The exact time can vary depending on the size of the potatoes. When they are properly cooked, you should be able to pierce them easily with a knife. Once cooked, drain them well.

2. Mash the Potatoes
Mash the potatoes using a potato ricer, a food processor, or simply a fork. Set the mash aside in a bowl while you cook the meat.

3. Sauté the Onion
Heat a skillet over medium heat and grease it with a little oil. Sauté 1 small finely chopped onion until it begins to turn translucent.

4. Cook the Beef
Add 150 grams of ground beef along with 1 pinch of salt, 1 pinch of ground white pepper, and 1 pinch of ground nutmeg. Cook for 5-8 minutes, until the meat is fully cooked and browned.

5. Combine and Chill
Remove from the heat and mix the meat with the mashed potato you set aside earlier. Cover with plastic wrap and let it cool in the refrigerator for a couple of hours so it becomes easy to handle.

6. Shape and Bread the Korokke
Set up 3 plates for breading: one with wheat flour, another with 1 or 2 beaten eggs, and another with panko. Lightly grease your hands with oil and shape the korokke into portions of about 50 grams each, forming them into oval shapes. Coat each korokke in the flour, then the beaten egg, and finally the panko.

7. Fry the Korokke
Heat the frying oil and fry the korokke until they are golden brown to your liking. Remove them from the oil and place them on paper towels to drain off the excess oil.

8. Serve
Serve immediately, or while still slightly warm, accompanied by a sauce of your choice.

Tips for the Best Korokke
Chill the Filling Thoroughly
Chilling the meat and potato mixture for a couple of hours in the refrigerator is essential for shaping. A firm, cold filling holds its oval shape perfectly and won't fall apart during breading or frying.
Experiment with Fillings
While this version uses ground beef, korokke welcome all kinds of fillings such as vegetables, cheese, or seafood. Feel free to innovate and create your own versions using your favorite ingredients.
Pick the Right Sauce
Korokke can be served with tonkatsu sauce, Japanese mayonnaise, or miso soup. Thanks to their easy preparation and versatility, they work beautifully for practically any occasion, from a special-occasion appetizer to a quick lunch or dinner.
