Fabada is one of Spain's most beloved comfort dishes, a hearty Asturian bean stew loaded with cured pork and smoky sausage. This Crock Pot version takes all the traditional flavor and lets the slow cooker do the work for you, so you can set it in the morning and come home to a pot of rich, fragrant stew.

Slow cooking is the secret here: the fabas turn tender without falling apart, and the beans soak up the deep flavor of the meats and aromatics. It is the kind of dish that tastes like it simmered all day over a fire, with almost no effort on your part.

Serve it with crusty bread to mop up the broth, and if you can, let it rest a few hours or overnight in the fridge before reheating. The flavors only get better with time, making it a perfect make-ahead meal for a crowd.

How to Make Fabada in Crock Pot Step by Step

1. Soak the beans and panceta

About 10 to 12 hours before you plan to cook, put 500 g of Asturian white beans in one bowl and 100 g of cured panceta in another and cover both with water. When the soaking time is up, drain them and rinse well under cold running water.

2. Load the slow cooker

Place the drained beans in the bottom of the Crock Pot and add the panceta, 2 chorizos, 1 morcilla, a few strands of saffron and 2 bay leaves. Spread everything out so the meats are nestled among the beans.

3. Cover with water

Pour in enough water to cover the beans, making sure the liquid sits about a finger's width above the top of the beans. This gives the stew enough broth to cook down slowly without drying out.

4. Cook on low for 7 hours

Set the Crock Pot to low and cook for 7 hours, keeping the lid on so the steam and heat stay inside. Resist lifting the lid too often, as the slow, steady cooking is what gives the fabada its deep flavor and tender beans.

5. Stir gently and season

Once the cooking time is up, move the pot in circular motions to bind the broth and mix everything together, without using a spoon or any other utensil so the beans don't break. Taste and add salt if needed.

6. Rest and serve

If you can resist the temptation, let the fabada rest for a few hours or even until the next day in the fridge, as the flavor will be even better. Reheat gently and serve hot in deep bowls.

Tips for the Best Fabada in Crock Pot

Let the slow cooker do its job

The best thing about using a slow cooker for this dish is that the ingredients cook slowly for hours, each one releasing all its flavor and texture. This gentle cooking keeps the fabas tender without falling apart and lets them blend perfectly with the meats and seasonings.

Rest it for deeper flavor

If you can, let the fabada rest a couple of hours, or even until the next day in the fridge. The flavors intensify and the result is even more spectacular, so it is well worth planning ahead.

Stir without breaking the beans

When it is time to bind the broth, swirl the pot in circular motions instead of stirring with a spoon. This keeps the beans whole while bringing the stew together, and remember to taste before adding salt since the cured meats are already salty.
