These baked quinoa and vegetable fritters are a healthy, flavorful snack that comes together easily with pantry staples. They are perfect as an appetizer, a starter, or a light and nutritious dinner. With a golden, crispy exterior and a tender, juicy interior, they are delicious on their own or paired with a dipping sauce like yogurt sauce or guacamole.

The recipe starts with raw quinoa that we cook at home, though you can also use pre-cooked quinoa from a pouch. If using pre-cooked quinoa, you will need 250 g for the quantities in this recipe. If you cook the quinoa yourself, it is important to rinse it well before cooking to remove a substance called saponin, which is present in the hull and gives it a bitter taste.
To make these fritters more complete and interesting, we add simple vegetables that you likely already have in the fridge: onion, carrot, and zucchini. You could also use broccoli, red pepper, or mushrooms—whatever you prefer. A little soy sauce in the mix adds an original and very tasty flavor note.

Ingredients for Quinoa Fritters
Makes 6 fritters
- 100 g quinoa
- 1 tablespoon olive oil
- 200 g water
- Salt
- 50 g onion
- 50 g carrot
- 50 g zucchini
- 1 medium egg
- 15 g breadcrumbs
- 1 tablespoon soy sauce
- Ground black pepper

How to Make Quinoa Fritters Step by Step
1. Rinse the quinoa
First, we cook 100 g of quinoa. Rinse it beforehand under cold running water using a strainer, then let it drain well.

2. Toast the quinoa and add water
Place a small pot over medium heat with 1 tablespoon of olive oil. When the oil is hot, add the quinoa and toast it for 2 minutes, stirring continuously. Then add 200 g of water and a pinch of salt, and mix.

3. Cook the quinoa
Let the quinoa cook over medium heat with the lid on for 15 minutes.

4. Fluff and cool the quinoa
Afterwards, fluff the cooked quinoa with a fork and let it cool.

5. Finely chop the vegetables
Meanwhile, finely chop 50 g of onion and cut 50 g of carrot and 50 g of zucchini into very small cubes.

6. Mix all the ingredients
In a bowl, mix well the cooked quinoa with the onion, carrot, zucchini, 1 beaten medium egg, 15 g of breadcrumbs, 1 tablespoon of soy sauce, and ground black pepper.

7. Shape the fritters
Line a baking tray with parchment paper and shape the quinoa fritters using a plating ring. Place about 3 tablespoons of the mixture inside the ring and flatten with the help of a spoon.

8. Bake the fritters
Preheat the oven to 200 °C with top and bottom heat, without fan. Bake the fritters for 15 minutes at 200 °C in the middle of the oven.

9. Serve the fritters
Serve the quinoa fritters freshly made to enjoy them warm, which is when they are at their best.

Tips for the Best Quinoa Fritters
Use a plating ring for perfect shape
When forming the fritters, use a plating ring to get round, even, and flat fritters. In this case, we made fritters that weighed around 80 g each and needed 15 minutes of baking at 200 °C. This way, we obtained quinoa fritters that are golden and crispy on the outside, and tender and juicy on the inside.
Customize the vegetables
To make this recipe more complete and interesting, we prepare these quinoa fritters with simple vegetables that everyone can have on hand in the fridge: onion, carrot, and zucchini. However, you could also use broccoli, red pepper, mushrooms… whatever you like. Additionally, we add a little soy sauce to the fritter mixture, which provides an original and very tasty flavor note.
Serve with a dipping sauce
These fritters are excellent on their own or accompanied by a sauce of your choice, such as yogurt sauce or guacamole. A delight!
