Calçots are a special variety of onion harvested young and tender, famous in Catalonia for their sweet, mild flavor. Their name comes from the practice of hilling soil around the plant as it grows, which forces the long, slender shape that makes them perfect for grilling. Once a year, families and friends gather for a calçotada, a festive outdoor meal built around these charred onions dipped in rich sauce.

Though people call them grilled, calçots are actually cooked directly over a lively flame that later turns to embers. The intense heat blisters the outer layers until they are nearly black, while the inside steams into a soft, juicy heart. After grilling, they are wrapped to rest so the residual heat finishes the job.

No calçotada is complete without the sauce. Many call it romesco, but purists insist the true calçot sauce is a close cousin made with ñora peppers and extra nuts instead of bread, giving it a lighter, more digestible character. You can buy a good jarred version, but making it at home brings a fresher, more authentic taste to the table.

Eating calçots is a hands-on ritual. You peel away the charred outer layers to reveal the white, tender core, then dip it in sauce and eat it in one or two bites, tilting your head back. It is messy, social, and utterly delicious — the kind of food that keeps everyone reaching for more.

Ingredients for Calçots a la Brasa
For 2 servings
- 1 bunch of calçots (about 25 units)
- Calçot sauce, to serve alongside

How to Make Calçots a la Brasa Step by Step
1. Clean the calçots
Separate the calçots from 1 bunch (about 25 units) and carefully remove any excess soil clinging to them. There is no need to wash them with water, and some dirt can remain since it will burn off over the fire. They need no further preparation either — leave the roots on, because cutting them would let the juices escape and leave the calçots dry.

2. Lay out the vine cuttings
Place the vine cuttings (or whatever wood you plan to use) in the area where you will build the fire. It is important to have enough to cover the entire base of the grill you will use. Traditionally, grapevine cuttings are used because they give that characteristic smoky flavor, but if you do not have them, firewood or any well-dried wood that produces a good flame will also work.

3. Light the fire
Next, light the fire in the vine cuttings and wait for it to catch evenly. Flames should form and become intense so the calçots can be grilled in a short time.

4. Arrange the calçots on the grill
While waiting for the fire to catch, arrange the calçots on the grill in a single layer without piling them up, always keeping the white part of the calçots toward the center so it cooks well over the flames. For even cooking, place the thicker calçots in the center and the thinner ones toward the sides where the heat is less intense. If your grill is very wide, you can even place two calçots per row, always with the white part facing inward. Here we use a grill that closes; if yours is open, you would typically thread them by the root onto a wire first so you can turn them all at once.

5. Grill over the flame
When the flame is quite lively, place the grill over it and let the calçots cook for about 5 or 6 minutes. The outside of the white part should char. Try to keep the flames from hitting the tips of the green leaves too much so they are easy to peel later.

6. Remove the grill from the fire
After this time, remove the grill from the fire and carefully set it on the ground to turn it over. There is no need to open it, as you will see in the next step.

7. Flip the grill
To turn the calçots, rotate the grill by moving the handle to the opposite side so it pivots on the closed side. This way, you prevent the calçots from sliding out through the open edges, which is what would happen if you turned it the other way. At worst, with this method, they may just get slightly squished.

8. Grill the other side
Once flipped, place the grill back over the flames and grill the calçots on the other side for another 5 or 6 minutes, or until you see them release water — what is known as “the calçot starting to cry.” This tells you they are properly hot inside. Do not overcook them or they will dry out.

9. Wrap the calçots
Take the grill off the fire and, without delay, wrap the calçots in parchment paper to form a well-sealed package that traps steam. You can fold the green leaves so the package closes better.

10. Let them rest
Once wrapped, let them rest for half an hour inside a plastic bag, a cardboard box, or a container or pot that holds heat well. This step is mandatory and necessary so the residual heat finishes softening the inside, leaving them juicy while keeping them at an ideal temperature for eating.

11. Grill the meats and sides
Repeat the process until all the calçots are done, and while they rest, prepare the meats and other dishes you plan to serve as a main course over the leftover embers.

12. Serve the calçots
As soon as the resting time is up and without delay so they do not cool, take out the packages of calçots in the order they were prepared and serve them with the calçot sauce.

13. Peel the calçots
To peel a calçot, the easiest way is to press the tip at the root end with two fingers and, with the other hand, pull the central leaves from the other end. You will see the charred layer come away on its own, revealing the tender, juicy inside.

14. Dip in the sauce
All that is left is to dip the white part of the calçot in the sauce and bring this delight to your mouth, tilting your head back to eat the white part in one or two bites while holding it by the leaves.

Tips for the Best Calçots a la Brasa
Choose the right calçots
Calçots are usually sold in bunches of 25, and a serving is 10 to 15 per person, so plan on one bunch for every 2 people. If appetites are big, it is wise to have an extra bunch or two on hand — they are so good it is hard to stop eating. If you have never tried them, be warned: they are addictive.
Use the embers wisely
At a calçotada, when the flames die down and the calçots are resting, those embers are not wasted — they are used to cook what comes next. This is the moment to grill some butifarras or meats such as pancetta, a rabbit leg, or lamb chops. They are served as a main course with alioli, white beans sautéed with garlic and parsley, and the classic Catalan pan con tomate. In season, grilled artichokes always fit perfectly into the menu.
Get the sauce right
Many people call the accompanying sauce romesco, but for purists that is unacceptable, since the sauce for calçots is really a small variation of romesco that always uses ñora peppers and replaces the bread with more nuts to make it more digestible. Although there are quality commercial versions, it is worth making it at home for a more authentic flavor. To make it at home, you can start from a romesco sauce with ñoras and substitute the bread for an extra handful of nuts.
