- 750 ml whole milk
- 150 g sugar
- 1 cinnamon stick
- Peel of half a lemon
- 2 egg yolks
- 60 g cornstarch
- 50 g cornstarch

- Sunflower oil
- 50 g sugar
- 1 teaspoon cinnamon

How to Make Leche Frita Step by Step
1. Infuse the Milk
Put 500 ml of whole milk in a saucepan. Add 150 g of sugar, 1 cinnamon stick, and the peel of half a lemon. Heat over medium heat for a few minutes until the sugar dissolves completely. At that point, remove the saucepan from the heat and let it rest.

2. Mix the Milk and Yolks
In a separate bowl, combine the remaining 250 ml of whole milk with 2 egg yolks. Mix well until these two ingredients are fully integrated.

3. Add the Cornstarch
Add 60 g of cornstarch to the bowl and mix these ingredients well until you get a homogeneous mixture. Set aside.

4. Remove the Cinnamon and Lemon
Next, remove the cinnamon stick and the lemon peel from the milk in the saucepan.

5. Pour the Yolk Mixture into the Saucepan
Add the mixture from the bowl to the saucepan with the aromatic milk. Mix the whole thing well.

6. Thicken the Mixture
Put the saucepan with the mixture back over medium-low heat and heat until it thickens, stirring constantly so it does not stick to the bottom.

7. Chill the Mixture
Once the mixture has thickened, pour it into a greased tray and let it cool. Smooth the surface, cover with plastic wrap touching the surface of the cream, and put it in the refrigerator until completely cold, ideally overnight. We used a 20x20 cm tray, though you can use another size; if it is larger, the leche frita will be thinner, and if it is smaller, it will be thicker.

8. Cut and Bread the Portions
When the mixture is completely set, unmold it and cut it into portions as you like. We cut ours into 9 portions. Prepare one plate with about 50 g of cornstarch and another with 2 beaten eggs. Coat each portion first with cornstarch and then with beaten egg.

9. Fry Each Portion
Heat plenty of sunflower oil. When it is hot enough but not smoking, fry the breaded leche frita portions for a few minutes on each side until they are golden to your liking.

10. Drain the Fried Portions
As you go, place the fried portions on absorbent paper to remove excess oil.

11. Coat with Sugar and Cinnamon
To finish, roll the pieces of leche frita in a mixture of about 50 g of sugar and 1 teaspoon of ground cinnamon.

12. Serve the Leche Frita
Serve this delicious traditional dessert while still warm, or keep it in the refrigerator to serve cold.
