Mamaliga is the warm, comforting cornmeal staple that has been part of Romanian and Moldovan kitchens for generations. Originally a humble survival food in modest homes, it has since earned a place of honor on family tables and restaurant menus alike.

Today it is served as a hearty side dish, often paired with sarmale, topped with sour cream and cheese, or dressed with sauces and stews. You can even bake it, grill it, or fry it to give it a crispy edge.

This version keeps things simple: water, salt, optional butter, and coarse polenta cornmeal. In under an hour you will have a creamy, sliceable dish that brings a taste of Eastern Europe to your table.

Ingredients for Mamaliga

This makes 4 servings.

  • 650 ml water
  • 20 g butter (optional)
  • ½ teaspoon salt
  • 175 g polenta cornmeal (about 1 cup)

How to Make Mamaliga Step by Step

1. Heat the water with butter and salt

Pour 650 ml of water into an 18 cm pot and set it over heat. Add 20 g of butter, if using, so it melts gradually, along with ½ teaspoon of salt. If you have a traditional Romanian mamaliga pot, feel free to use it.

2. Add a little cornmeal to the boiling water

Once the water comes to a boil, stir in a couple of tablespoons of the 175 g of polenta cornmeal. Adding a small amount first helps prevent lumps when the rest goes in later.

3. Dissolve well to avoid lumps

Stir vigorously with a wooden spoon or a whisk to dissolve the cornmeal completely so no lumps form. Taste the mixture and adjust the salt if needed.

4. Stir in the rest of the cornmeal

As soon as the water returns to a boil, start adding the remaining cornmeal in a steady stream while stirring constantly. Keep the mixture moving to stop lumps from forming.

5. Mix until smooth and homogeneous

Keep stirring until all the cornmeal is fully incorporated and the mixture is smooth and lump-free. Taste once more and correct the salt if necessary.

6. Cover and cook on low for 15 minutes

Cover the pot and let the mamaliga cook over low heat for about 15 minutes. Stir it a couple of times during this period to prevent lumps and ensure even cooking.

7. Smooth the surface and cook 30 minutes more

After 15 minutes, smooth the surface of the mamaliga with your spoon. Cover the pot again, leaving it slightly ajar so steam can escape, and cook for another 30 minutes over the lowest heat.

8. Unmold the mamaliga

When the cooking time is up, run a spatula or knife around the edge of the pot to loosen the mamaliga. If the pot is not nonstick, give it a gentle nudge so the mamaliga slides out, leaving a thin layer stuck to the bottom. Let it cool slightly before serving.

Tips for the Best Mamaliga

Use the right cornmeal

Not every cornmeal works here. Choose coarse polenta cornmeal, which has a thicker grind than regular corn flour. Avoid precooked cornmeal for arepas, nixtamalized corn flour for tortillas, Galician corn flour for empanadas, and cornstarch.

Serve it the traditional way

Mamaliga is classically served alongside sarmale or topped with sour cream and cheese for extra creaminess. You can also stuff it, add sauces, pair it with stews, or finish it in the oven, on the grill, or fried. Traditionally it is cut with a piece of kitchen twine rather than a knife, which makes clean slices easy thanks to its dense texture.

A note on history and leftovers

Before corn arrived from the Americas, mamaliga was originally made with millet. That version fell out of use as corn became more accessible, though millet mamaliga is making a comeback among fans of ancient grains. If a thin layer sticks to the pot, a traditional trick is to add a splash of milk to loosen it and eat it for breakfast.
